Skillet Enoki Beef Rolls

Skillet Enoki Beef Rolls sits in the Snacks section of Regbie. The card serves 4 servings. Plan on 30 minutes from the first measure to the plate. The amounts and the method are both written on this page.

Ingredients

Yield: 4 servings

  • 400 grams enoki mushrooms, 1 package is 200 grams
  • 1½ pounds thinly sliced beef, pork, or lamb, look for sliced meat sold for hot pot or shabu shabu
  • ½ teaspoon Umami Stir Fry Powder, or Diamond Crystal kosher salt
  • 2 tablespoons avocado oil
  • ½ cup All-Purpose Stir-Fry Sauce
  • 1 teaspoon arrowroot powder
  • 2 scallions, thinly sliced

Method

  1. Slice the root ends off the enoki mushrooms, about 2 inches from the end. The mushrooms should still be attached at the bottom.

  2. Carefully separate the enoki mushrooms into small bundles that are about ½-inch in diameter.

  3. Lay a piece of beef on a cutting board and place a small bundle of mushrooms in the middle. Tightly wrap the thinly sliced meat around each bundle of mushrooms. Continue rolling up beef rolls until you run out of sliced meat.

  4. Scatter the rolls on all sides with Umami Stir-Fry Powder or Diamond Crystal kosher salt.

  5. Warm a wide skillet over a medium-hot burner. When the pan is hot, pour in the avocado oil.

  6. Set half of the rolls in the hot pan, seam-side down. Fry undisturbed for 1 minute or until browned on the bottom.

  7. Flip the rolls and continue cooking for 1 to 2 minutes or until browned all over. Move the cooked rolls to a shallow dish and finish cooking the rest of the beef and enoki mushroom rolls

  8. While you’re browning the beef and enoki rolls, make the sauce by whisking All-Purpose Stir-Fry Sauce and arrowroot powder.

  9. When you finish frying the beef and enoki rolls, turn down the heat to medium-low and pour the sauce into the now-empty pan. Leave stirring, until the sauce thickens slightly.

  10. Turn off the heat and add the rolls to the pan. Coat them well with the sauce.

  11. Move the beef rolls to a serving platter and finish with scallions. Enjoy!
