The Star Ingredients for Green Soup with Tangy Cashew Cream
Crafting an exceptional soup begins with selecting the finest ingredients. For this nourishing green soup and its signature tangy cashew cream, each component plays a vital role in building layers of flavor and achieving that perfect creamy consistency. Here’s a detailed look at what you’ll need:
Crafting the Creamy Cashew Topping

- Raw Cashews: These are the foundation of our luscious dairy-free cream. Soaking them is crucial – a quick 15-minute soak in boiling water softens them perfectly for a silky-smooth blend. If you have more time, soaking in cold water for 2-3 hours (or until visibly plump) works just as well. This step is key to achieving that velvety texture without any grittiness.
- Extra-Virgin Olive Oil: A drizzle of quality olive oil adds richness and a subtle fruity note, enhancing the overall creaminess and mouthfeel of the cashew topping.
- Fresh Lemon Juice: This is where the “tangy” in our “Tangy Cashew Cream” comes from! Fresh lemon juice brightens the flavor profile, cutting through the richness and adding a zesty finish that truly elevates the soup.
- Garlic Clove (Peeled): A single garlic clove imparts a gentle savory depth, complementing the other flavors without overpowering the cream.
- Diamond Crystal Kosher Salt: Essential for seasoning. This specific type of kosher salt is preferred for its pure flavor and consistent texture, allowing for precise seasoning control.
Assembling the Wholesome Green Soup Base

- Medium Head of Broccoli: Our primary green vegetable, broccoli, provides a wealth of nutrients and forms the hearty backbone of this soup. You can use approximately 10 to 12 ounces of fresh florets, or opt for frozen broccoli—no need to thaw beforehand, as it will cook perfectly in the Instant Pot or on the stovetop.
- Zucchini: A mild-flavored vegetable that adds volume, vitamins, and a smooth texture to the soup when blended, without imparting a strong flavor of its own.
- Green Onions (Scallions): These provide a fresh, mild oniony flavor that’s distinct from yellow or white onions, adding a delicate layer to the soup’s aromatic base.
- Peeled and Diced Apple: This is a brilliant chef’s secret I picked up from my sister, Fiona! Adding a touch of diced apple to puréed vegetable soups introduces a subtle sweetness that masterfully balances and harmonizes the savory notes of the vegetables. It’s a game-changer that prevents the soup from tasting too “green” or flat.
- Chicken Broth or Vegetable Broth: The quality of your broth significantly impacts the final taste. For a rich, deeply flavored soup, use the best quality broth you can find. Chicken broth or bone broth offers a robust foundation, while vegetable broth ensures the soup remains vegan-friendly. Avoid thin, watery broths, as they can make your delicious soup taste more like hot vegetable juice than a hearty meal. I often reach for Roli Roti brand chicken bone broth for its superior depth.
- Baby Spinach: This is the secret to achieving that wonderfully bright green color. Adding baby spinach at the very end and blending immediately once wilted locks in its vibrant hue. Even if you accidentally overcook it slightly and the color dulls, rest assured, the soup will still taste absolutely fantastic! Spinach also adds a nutritional boost with minimal flavor alteration.
- Extra Virgin Olive Oil: Used for sautéing the aromatics, it builds the initial flavor foundation for the soup.
- Yellow or White Onion: Provides a sweet and savory base flavor when sautéed, deepening the overall profile of the soup.
- Minced Garlic: An essential aromatic, garlic adds pungent and savory notes that are critical to the soup’s character.
- Chopped Fresh Ginger: Offers a warm, slightly spicy, and aromatic kick that beautifully complements the green vegetables and adds a layer of sophistication.
- Freshly Ground Black Pepper: For seasoning and a touch of warmth.
- Diamond Crystal Kosher Salt: Used throughout the cooking process to layer seasoning and bring out the best in each ingredient.
Step-by-Step: How to Make Green Soup with Tangy Cashew Cream
This nourishing green soup might look impressive, but it’s incredibly straightforward to make. We’ll start with the creamy cashew topping and then move on to preparing the vibrant soup base, ensuring a perfectly balanced and flavorful meal.
Preparing Your Silky Cashew Cream
First things first, let’s get that luscious cashew cream ready! This creamy topping adds a fantastic tangy counterpoint to the rich green soup.
- Blend the Ingredients: After draining your pre-soaked cashews thoroughly, transfer them to a high-speed blender. Add ¼ cup of fresh water, a tablespoon of extra virgin olive oil, the fresh lemon juice, the peeled garlic clove, and ½ teaspoon of Diamond Crystal kosher salt.
-

Draining soaked cashews before blending them into a smooth cream. Achieve Smoothness: Purée the mixture in your blender until it reaches a perfectly smooth and creamy consistency. If you prefer, a powerful immersion blender in a blender cup can also work wonders, though a high-speed blender often yields the silkiest result.

Blending the cashew cream to perfection. - Season and Set Aside: Taste the cashew cream and adjust the seasoning as needed. You might want to add a pinch more salt or a splash more lemon juice to achieve your desired tangy balance. Once perfected, set it aside while you prepare the soup.
-

Pouring the freshly blended cashew cream into a bowl, ready to be served with the soup.
Cooking the Nutritious Green Soup
Now, let’s bring this vibrant green soup to life! We’ll use an Instant Pot for speed and efficiency, but stovetop instructions follow if you don’t have one.
- Sauté the Aromatics (Instant Pot Method): Begin by turning on the sauté function of your Instant Pot. Once the pot is hot, swirl in the extra virgin olive oil to coat the bottom.
-

Adding olive oil to the Instant Pot for sautéing. - Cook the Onion: Add the chopped onion along with ½ teaspoon of Diamond Crystal kosher salt to the hot oil. Cook for 2 to 3 minutes, stirring frequently, until the onion begins to soften and turns slightly translucent. This step builds the foundational savory flavor of your soup. Once softened, turn off the sauté function.
-

Seasoning the onions with salt as they sauté.
Sautéed onions, ready for the next step. - Infuse with Garlic and Ginger: Stir in the minced garlic and chopped fresh ginger. Cook for about 30 seconds until their fragrant aromas fill your kitchen. Be careful not to burn the garlic.
-

Adding aromatic ginger to the soup base. - Add the Vegetables: Now, add the chopped broccoli florets, zucchini, green onions/scallions, and the secret ingredient – diced apple – to the Instant Pot. Mix all the vegetables well to combine them with the aromatics.
-

Broccoli goes into the Instant Pot.
Adding zucchini, green onions, and apple for depth and balance. - Pour in Broth and Season: Pour in your chosen broth (chicken, bone, or vegetable) and add another ½ teaspoon of Diamond Crystal kosher salt. Stir to ensure everything is well distributed.
-

Broth added, ready for cooking. - Pressure Cook: Secure the lid on your Instant Pot, ensuring the vent is sealed. Cook under high pressure for just 1 minute. The Instant Pot will take a few minutes to come to pressure before the cooking time begins.
-

Lid secured for pressure cooking. - Release Pressure: Once the cooking cycle is complete, turn off the Instant Pot and carefully release the pressure manually. Always exercise caution when doing this, as hot steam will escape.
-

Manually releasing the pressure from the Instant Pot. - Incorporate Spinach: Open the lid and immediately add the baby spinach to the hot soup. Stir gently until the spinach leaves are just wilted and retain their bright green color. This rapid cooking ensures maximum color and nutrient retention.
-

Adding baby spinach for vibrant color and nutrients.
Soup ready for blending after spinach has wilted. - Blend to Perfection: Carefully transfer the soup in batches to a high-speed blender. Remember to fill the blender cup no more than two-thirds full when blending hot liquids. Crucially, remove the center cap from the blender lid and cover the opening with a clean kitchen towel. This allows steam to escape, preventing dangerous pressure buildup. Blend until the soup is perfectly smooth and creamy.
-

Blending the soup for a silky-smooth finish. Immersion Blender Alternative: Alternatively, you can use an immersion blender directly in the pot. However, be aware that this method might not achieve the same level of silky smoothness, and the baby spinach can sometimes get tangled around the blade, making it slightly less efficient.
- Final Seasoning and Serving: Taste the blended soup and adjust seasoning with additional salt and freshly ground black pepper as needed. Pour the hot soup into individual bowls, dollop generously with the tangy cashew cream you prepared earlier, and serve immediately. Enjoy this comforting and incredibly healthy meal!
-

A final swirl of cashew cream makes this soup irresistible.
Stovetop Method: No Instant Pot? No Problem!
Don’t have an Instant Pot? No worries! This delicious Green Soup with Tangy Cashew Cream can be made just as easily on your stovetop. While it may take a few extra minutes, the results are equally delightful. Here’s how to adapt the recipe for a classic stovetop preparation:
- Sauté the Aromatics: Grab a large, heavy-bottomed saucepan or Dutch oven and place it over medium heat. Once hot, add the extra virgin olive oil. Toss in your chopped onion and ½ teaspoon of Diamond Crystal kosher salt. Sauté patiently, stirring frequently, for about 8 to 10 minutes until the onion has become soft and translucent. This longer sauté time allows the onions to caramelize slightly, building a deeper flavor base.
- Add Garlic and Ginger: Stir in the minced garlic and chopped fresh ginger. Continue to cook for another 30 seconds, or until you can distinctly smell their wonderful fragrance. Be mindful not to let the garlic brown excessively, as it can turn bitter.
- Incorporate Vegetables and Broth: Add the broccoli florets, zucchini, green onions (scallions), and diced apple to the pot. Pour in the broth and add the remaining ½ teaspoon of Diamond Crystal kosher salt.
- Simmer to Tenderness: Bring the soup to a vigorous boil over high heat. Once boiling, reduce the heat to maintain a gentle simmer. Allow the soup to cook for 4 to 8 minutes, or until all the vegetables are fork-tender. The cooking time will depend on the size of your vegetable pieces and whether you used fresh or frozen broccoli.
- Wilt the Spinach: Once the vegetables are tender, remove the pot from the heat. Immediately stir in the baby spinach. Continue stirring until the spinach leaves are just wilted and have transformed into that beautiful, vibrant green color.
- Blend Until Smooth: Carefully transfer the hot soup in batches to a high-speed blender. As with the Instant Pot method, always fill the blender no more than two-thirds full for hot liquids. Remove the center cap of the lid and cover with a clean kitchen towel to allow steam to escape safely. Blend until you achieve a smooth, creamy consistency. If you’re using an immersion blender directly in the pot, ensure you blend thoroughly, though it might not be quite as smooth, especially with the spinach.
-

Blending the stovetop green soup for a perfectly smooth finish. - Final Touches and Serve: Taste the soup and adjust the seasoning with more salt and freshly ground black pepper to your liking. Ladle the steaming soup into bowls, add a generous dollop of the tangy cashew cream, and serve immediately for a wholesome and delicious meal!
Storage and Meal Prep Tips
This Green Soup with Tangy Cashew Cream is not just delicious fresh; it’s also an absolute dream for meal prepping! Its flavors deepen beautifully over time, making it an excellent candidate for making ahead and enjoying throughout the week. Proper storage ensures you can savor its goodness for days to come.
For optimal freshness and convenience:
- Soup Storage: Once the soup has cooled completely, transfer it to an airtight container. It will keep wonderfully in the refrigerator for up to 4 days. If you’re looking to extend its life, the soup freezes exceptionally well. Portion it into freezer-safe containers or bags and freeze for up to 3 months. When ready to enjoy, simply thaw in the refrigerator overnight and reheat gently on the stovetop or in the microwave.
- Cashew Cream Storage: To maintain its tangy freshness and consistency, it’s best to store the cashew cream separately from the soup. Place it in its own airtight container and refrigerate for up to a week. This prevents the cream from thinning out or its delicate flavors from being absorbed by the soup. When serving, add a fresh dollop of cream to each warmed bowl of soup.
Having pre-made portions of both the soup and the cashew cream on hand makes for incredibly quick and easy healthy meals throughout your busy week. It’s the perfect solution for nourishing yourself and your family without the daily cooking hassle!
Expert Tips and Creative Variations for Your Green Soup
While this Green Soup with Tangy Cashew Cream is fantastic as is, a few expert tips and creative variations can elevate it even further or help you tailor it to your specific tastes and dietary needs. Don’t be afraid to experiment and make this recipe truly your own!
- Meaty Boost for Extra Heartiness: To transform this already satisfying soup into a more substantial meal, consider adding cooked protein. Shredded leftover Kalua Pork, rotisserie chicken, sautéed ground turkey, or even cooked shrimp can be stirred into the soup after blending. This not only adds a wonderful savory depth but also makes the meal more filling, perfect for those seeking a protein-rich option.
- Legume Boost for Plant-Based Power: If you’re looking for an extra plant-based protein and fiber punch, feel free to add canned and drained chickpeas, lentils, or white beans to the soup. While legumes aren’t traditionally considered paleo, many people incorporate them into a balanced diet. This is a great way to bulk up the soup and add another layer of texture and nutrition. Adjust to your preferences!
- Safe Blending Practices for Hot Liquids: When using a high-speed blender for hot soup, safety is paramount. Always fill the blender jar no more than two-thirds full to prevent overflow. To release steam and avoid pressure buildup, remove the center cap of the blender lid and cover the opening with a clean kitchen towel. Hold the towel firmly in place. This crucial step prevents dangerous splatters and ensures a smooth blending process.
- Immersion Blender Considerations: An immersion blender offers convenience, allowing you to blend directly in the pot. However, be aware that it might not achieve the same silky-smooth consistency as a high-speed blender. Additionally, the baby spinach can sometimes wrap around the immersion blender blade, requiring more effort to achieve an even blend.
- Keep the Soup Vibrantly Green: The secret to that eye-catching bright green color is timing! Only add the baby spinach to the pot once the main vegetables are fully cooked. Stir it in just until it wilts, then blend the soup immediately. Overcooking the spinach or letting it sit too long before blending can cause the vibrant green to dull, resulting in a slightly muted color.
- Customization with Other Vegetables and Greens: This soup is incredibly forgiving and open to customization. Feel free to swap out broccoli for cauliflower, or experiment with other leafy greens such as kale, Swiss chard, or collard greens instead of spinach. If using heartier greens or denser vegetables (like kale or root vegetables), you will need to cook them for a longer duration to ensure they are soft enough to blend properly into a creamy soup. Adjust cooking times accordingly to achieve your desired tenderness.
- Spice It Up: For those who enjoy a little heat, a pinch of red pepper flakes or a dash of your favorite hot sauce can be added to the soup before blending, or as a garnish.
- Herbaceous Finish: Fresh herbs like cilantro, parsley, or even a hint of mint can provide a delightful aromatic finish when stirred in just before serving or sprinkled on top.
- Toasted Seeds or Nuts: For added crunch and healthy fats, consider garnishing your soup with toasted pumpkin seeds, sunflower seeds, or even a sprinkle of chopped toasted almonds.
These tips and variations ensure that your Green Soup with Tangy Cashew Cream can be adapted to any preference, making it a truly flexible and rewarding recipe to incorporate into your healthy eating repertoire.
