Sous Vide Turkish Slider Burgers

Sous Vide Turkish Slider Burgers sits in the Beef section of Regbie. The card serves 4 servings. Plan on 3 hours 10 minutes from the first measure to the plate. The amounts and the method are both written on this page.

Ingredients

Yield: 4 servings

  • 1 tablespoon coconut oil
  • ½ medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1 pound ground beef
  • 1 teaspoon Diamond Crystal kosher salt
  • Freshly ground black pepper
  • 2 tablespoons ghee

Method

  1. Gather and prep your ingredients. Finely chop your onion and mince your garlic.

  2. Warm up the coconut oil in a small cast iron skillet over a medium burner.

  3. Once the pan is hot, sauté the diced onion with some salt and pepper. When the onions are softened and translucent, add the minced garlic and stir everything until the garlic is fragrant (~30 seconds). Move the cooked onions and garlic to a small bowl to cool to room temperature.

  4. In a large bowl, combine the beef, cooled onion mix, Turkish seasoning, several cranks of freshly ground black pepper, and a generous pinch of salt. Stir well but don't overwork the meat.

  5. Form the meat into 8 sliders and place them on a plastic-wrap lined platter. Lid the patties with another plastic wrap and put them in the freezer for 2 hours.

  6. Once the patties are solid, vacuum seal them and store them in the fridge.

  7. When you're ready to cook the patties, dump the sliders into the Sousvide Supreme at 130°F and cook for 45 minutes.

  8. Take the burgers out of the water oven and bag and dry with paper towels.

  9. Warm up the ghee in a large cast iron skillet over a hot burner. When the pan is hot, sear the burgers for about 45 seconds on each side.
