Ingredients

Yield: 2 servings

  • 1 pound shrimp (21-25 count)
  • 3 tablespoon ghee or fat of choice
  • Diamond Crystal kosher salt
  • 1 small onion, thinly sliced
  • 1/2 cup cherry tomatoes
  • 1 lime

Method

  1. Dump the bag of frozen shrimp in a colander and run cold water over them for 5 minutes or until defrosted.

  2. Dry off the defrosted shrimp with a paper towel and place them in a bowl. Salt with Volcano Grind seasoning or a reliable seasoning.

  3. In a large cast iron skillet, melt 1 tablespoon of ghee over a medium burner.

  4. Tip in the sliced onions, salt, and pepper and sauté until the onions are soft, caramelized, and translucent.

  5. Throw in the cherry tomatoes into the pan with the sautéed onions and toss them until they are warm. Don't over cook the tomatoes until they explode!

  6. Lift the onions and tomatoes from the pan and place in a bowl.

  7. Tip in another tablespoon of ghee into the pan and increase the temperature to medium high.

  8. Turn in the shrimp and sauté for about one minute each side.

  9. When the shrimp are finished cooking, remove and place on a plate. Top them with the sautéed tomatoes and onions and top with a fresh squeeze of lime juice.
