Why This is The Best Juicy Turkey Burger Recipe You’ll Ever Make
What makes these turkey burgers stand head and shoulders above the rest? It’s a combination of smart techniques and unexpected ingredients that guarantee a moist, flavorful, and perfectly textured patty every time. Forget everything you thought you knew about dry turkey burgers; this recipe is a true revelation!
- Food Processor Simplicity and Perfection: The secret to effortlessly combining ingredients and achieving the ideal texture lies in your food processor. It expertly minces the shallots and mushrooms, then gently incorporates them with the ground turkey and seasonings. This creates a cohesive, well-blended mixture without overworking the meat, which is key to preventing dense patties. It’s kitchen magic that saves you time and effort!
- Balanced, Tender Texture: Just a few strategic pulses in the food processor help develop a minimal amount of myosin – the natural protein in meat that acts as a binder. This ensures your patties hold together beautifully without becoming rubbery. The finely chopped mushrooms and shallots play a crucial role here, infusing moisture and preventing the meat from becoming too compact, resulting in a wonderfully tender burger.
- Unbeatable Moisture and Flavor: This recipe tackles the common dryness of turkey burgers head-on. White button mushrooms are my secret weapon, adding incredible juiciness and a deep umami flavor without anyone detecting them visually or by taste. Mayonnaise acts as another tenderizing agent, keeping the patties moist and rich. Finally, coconut aminos bring a savory depth with a hint of sweetness, elevating the overall taste profile significantly.
- Naturally Gluten-Free & Paleo-Friendly: Unlike many turkey burger recipes that rely on breadcrumbs as a binder, ours uses the finely chopped vegetables to achieve the perfect consistency. This makes these delicious turkey burgers naturally gluten-free, paleo, and a healthier alternative for everyone to enjoy without compromise.
The result? Turkey burgers that are consistently juicy, bursting with flavor, remarkably easy to prepare, and cater to gluten-free and paleo lifestyles. These aren’t just good for turkey burgers; they’re simply *great* burgers!
Essential Ingredients for Your Delicious Turkey Burgers
Crafting the perfect turkey burger starts with high-quality ingredients. Here’s what you’ll need to create these moist and flavorful patties, along with some helpful tips and substitutions:

- Ground Turkey: For the best balance of flavor and juiciness, I recommend using 93% lean ground turkey. If you only have extra-lean (99%), simply increase the amount of mayonnaise slightly (details in the full recipe card below) to maintain moisture. You can also substitute ground chicken for a similar delicious result.
- Shallot: This aromatic ingredient adds a mild, sweet onion flavor that beautifully integrates into the patty mixture. If shallots aren’t available, a small amount of finely minced red onion can be used as an alternative.
- White Button Mushrooms: This is my ultimate secret weapon for achieving truly moist turkey burgers without needing any breadcrumbs. The mushrooms provide essential moisture and a fantastic umami depth. Once finely processed, their flavor is subtle, making these burgers appealing even to mushroom skeptics! Cremini (brown) mushrooms also work well.
- Mayonnaise: A magical ingredient in poultry recipes, mayonnaise is key to keeping these patties incredibly tender and moist. It adds richness and helps bind the ingredients without making the burger heavy.
- Coconut Aminos: These contribute a wonderful depth of savory flavor and a hint of natural sweetness. They are a gluten-free and soy-free alternative to soy sauce. If you don’t have coconut aminos, you can use tamari or a low-sodium soy sauce, but be mindful that they are saltier, so adjust seasoning accordingly.
- Kosher Salt & Freshly Ground Black Pepper: These fundamental seasonings are crucial for building the flavor foundation of your turkey burgers. Always use freshly ground pepper for the best aroma and taste.
- Gluten-Free Buns (Optional): For those who prefer a bun, choose your favorite gluten-free hamburger buns. Lately, I’ve been enjoying Carbonaut hamburger buns for their great texture and fiber content. Alternatively, skip the bun entirely and opt for crisp lettuce wraps for a lighter, carb-conscious meal.
- Classic Burger Fixings: Elevate your turkey burger experience with your favorite toppings! Essential fixings include fresh lettuce, ripe tomato slices, crunchy pickles, and your preferred condiments like ketchup, mustard, or extra mayonnaise. Get creative with cheeses, avocados, or caramelized onions for an extra gourmet touch!
How to Prepare the Juiciest Turkey Burgers: A Step-by-Step Guide
Creating these sensational turkey burgers is surprisingly straightforward. Follow these steps for perfect patties every time:
Step 1: Create the Aromatic Flavor Base
Begin by finely processing your aromatics. Add the peeled and roughly chopped shallot, stemmed and roughly chopped white button mushrooms, kosher salt, and freshly ground black pepper to the bowl of your food processor.

Pulse until the vegetables are very finely ground, almost a paste-like consistency, which usually takes about 20 seconds. Make sure to scrape down the sides of the bowl as needed to ensure everything is evenly processed.

Step 2: Gently Combine Turkey and Seasonings
Now, add the main ingredients to your food processor. Include the ground turkey, mayonnaise, and coconut aminos to the finely processed vegetable mixture.

Pulse 8 to 12 times, or until the ingredients are *just* combined. It’s crucial not to over-process the mixture, as this can lead to dense, tough patties. You want the ingredients integrated, but still with a little texture.

No Food Processor? No Problem!
If you don’t have a food processor, simply mince the shallot and mushrooms as finely as possible with a sharp knife. Then, transfer them to a large bowl and mix in the ground turkey, mayonnaise, coconut aminos, salt, and pepper by hand. The burgers might have a slightly chunkier texture, but they will still be incredibly delicious and juicy!
Step 3: Chill for Easier Handling (Optional, but Recommended)
Transfer the turkey burger mixture to a sealed container or a bowl covered with plastic wrap. Refrigerate it until you’re ready to cook, which can be up to 2 days. Chilling the mixture helps the flavors meld and makes the patties much easier to form without sticking. While you can cook them immediately, chilling prevents them from being too messy during shaping. For longer storage, you can freeze the raw mixture for up to 1 month; just remember to thaw it overnight in the refrigerator before cooking.

Step 4: Shape and Cook Your Perfect Turkey Burger Patties
Heat a 12-inch cast iron, carbon steel, or non-stick skillet over medium heat. Ensure the pan is properly preheated for even cooking and a good sear.
Can You Grill Turkey Burgers?
💡 Tip: The raw turkey mixture is softer and stickier than traditional beef burger meat. For this reason, a skillet is generally your best option for cooking these patties perfectly. If you desire a smoky flavor, you can still achieve it by placing the cast iron skillet directly onto your outdoor grill grates and cooking the patties within the skillet.
To prevent the mixture from sticking to your hands during shaping, lightly oil your palms with a touch of avocado oil.

Divide the turkey mixture into four equal portions. Gently form each portion into a round patty.

Place two patties into the hot pan. Using a spatula, gently press down on each patty until it’s about half an inch thick. Cook for approximately 3 minutes, or until the bottom is beautifully golden brown and caramelized.

Flip the patties and continue cooking for another 2 minutes, or until the second side is also lightly browned. The turkey burgers are fully cooked when both sides are golden and the internal temperature reaches 165°F (74°C) with a meat thermometer. Cook in batches if necessary, repeating the process with the remaining two patties.

Step 5: Assemble and Savor Your Creation!
Once your turkey burgers are cooked to perfection, it’s time to assemble. If using buns, lightly toast them for extra flavor and texture. Place a juicy patty on your bun or lettuce wrap, then pile high with your favorite burger fixings like crisp lettuce, ripe tomato slices, pickles, and a generous dollop of your chosen condiments. Take a bite and enjoy the ultimate juicy turkey burger!

Make-Ahead and Storage Tips for Convenience
These juicy turkey burgers are perfect for meal prepping! Here’s how you can prepare them in advance and store leftovers:
Uncooked Turkey Mixture: If you want to get a head start, prepare the turkey mixture up to 2 days in advance. Store it covered in an airtight container in the refrigerator. For longer storage, divide the mixture into individual patties, wrap each one tightly in plastic wrap, and freeze for up to 1 month. Thaw the frozen patties overnight in the fridge before cooking.
Cooked Turkey Burgers: Cooked turkey patties can be stored in an airtight container in the refrigerator for up to 4 days. To reheat, gently warm them in a skillet over medium-low heat until heated through, or microwave them for about 90 seconds. You can also freeze cooked patties in an airtight container for up to 1 month. This is great for quick, healthy meals any day of the week!
Delicious Pairings: What to Serve with Your Turkey Burgers
A great turkey burger deserves an equally great side dish. Here are some fantastic options to complete your meal:
- Crispy Sweet Potato Fries or classic French fries are always a crowd-pleaser and offer a delightful textural contrast.
- For a unique and savory crunch, try Crispy Chicken Skin Chips – a surprisingly delicious and low-carb alternative.
- A refreshing and vibrant Asian Chopped Salad provides a light, crisp, and tangy counterpoint to the rich burgers.
- Elevate your meal with grilled corn on the cob, a simple green salad with a zesty vinaigrette, or even a wholesome quinoa salad for added nutrients.
- Homemade coleslaw or a fresh fruit salad can also offer a refreshing balance.

These turkey burgers are juicy, easy, and gluten-free! Mushrooms, shallots, and mayo keep them moist and flavorful—no breadcrumbs required.
Ingredients
- 1 large shallot, peeled and roughly chopped (about ⅓ cup)
- ¼ pound white button mushrooms, stemmed and roughly chopped (about 2 cups)
- ½ teaspoon Diamond Crystal kosher salt
- ¼ teaspoon Freshly ground black pepper
- 1 pound ground turkey (93% lean)
- 1½ tablespoons mayonnaise
- 1 tablespoon coconut aminos
- Avocado oil, as needed for forming turkey burgers and cooking
- 4 gluten-free hamburger buns (optional)
- Lettuce leaves, sliced tomatoes, pickles, and condiments, as desired (optional toppings)
Instructions
- Grab a food processor fitted with an S-shaped blade and add shallot, mushrooms, salt, and pepper to the work bowl. Lock the cover and blitz until the veggies are finely ground (about 20 seconds), scraping down the sides if needed.
- Add ground turkey, mayonnaise, and coconut aminos. Pulse 8–12 times, or until just combined. Don’t over-process, or the patties can turn dense.
- Transfer the mixture to a sealed container or covered bowl and refrigerate until ready to cook (up to 2 days). Or freeze turkey mixture for up to 1 month. (Yes, you can totally cook the burgers right away without chilling them, but it will be a little messier when you form the patties.)
- Heat a 12-inch cast iron, carbon steel skillet, or non-stick skillet over medium heat.
- Lightly oil your hands with avocado oil and divide the turkey mixture into 4 equal portions.
- Place two patties into the hot pan and press down until they are about a half inch thick. Cook until browned on the bottom (about 3 minutes). Flip the patties and cook the other side until lightly browned (about 2 minutes). The patties are finished cooking when both sides are golden brown and the internal temperature of the patties is 165°F (74°C). Repeat with the remaining two patties.
- Toast your buns (if using), and top the patties with your favorite fixings. Enjoy!
Notes
- Grabbed 99% lean ground turkey by mistake? Use 3 tablespoons of mayonnaise, and it will turn out delicious!
- No food processor? Just mince the shallot and mushrooms finely with a knife and then mix the rest of the turkey burger ingredients in a bowl with your hands. The burgers will be chunkier but still delicious.
- 💡 Tip: The raw turkey mixture is softer and stickier than beef, so a skillet is your best bet for cooking. If you want smoky flavor, place the patties in a cast iron skillet on your outdoor grill.
