What is Joe’s Special Scramble?
Joe’s Special Scramble is more than just a meal; it’s a piece of San Francisco history, born in the bustling Italian-American diners of the 1920s. Specifically, its origins are traced back to New Joe’s, a renowned establishment on Broadway Street. Over the past century, this humble yet incredibly satisfying dish has transcended its Bay Area roots, becoming a cherished breakfast—and even dinner—staple in homes across the West Coast and beyond. Its enduring popularity is no mystery: Joe’s Special is remarkably simple to prepare, relying on common pantry and refrigerator ingredients that most households already have on hand.
The beauty of Joe’s Special lies in its hearty combination of ground beef, fresh spinach, savory mushrooms, and fluffy scrambled eggs. It’s a dish that embodies comfort, offering a robust flavor profile and a satisfying texture that truly sticks to your ribs. Our version stays true to the spirit of the original while thoughtfully adapting it to meet modern dietary preferences. We’ve crafted a Whole30-friendly rendition by omitting the dairy, which traditionally included Parmesan cheese, making it suitable for those avoiding cheese. To elevate the inherent savory depth, or ‘umami,’ we introduce a touch of fish sauce. Don’t be deterred by this; when used correctly, fish sauce doesn’t impart a fishy taste but rather enhances the overall richness and complexity of the dish, creating a more profound and satisfying flavor without the need for artificial additives.
For those who appreciate an extra kick, a dash of cayenne pepper sauce at the table, like Frank’s Red Hot Original Sauce, provides a welcome burst of flavor. And yes, fellow Whole30 enthusiasts, you can rejoice! According to Melissa Urban herself, Frank’s Red Hot Original Sauce is indeed Whole30-compliant, ensuring your culinary journey remains on track. This classic scramble is not just a nod to the past; it’s a versatile, wholesome, and incredibly delicious meal that you can enjoy at any time of day, delivering both flavor and nutritional benefits in every forkful.
Kitchen Essentials for Your Scramble
Before you begin, ensure you have these basic kitchen tools ready to make the cooking process smooth and enjoyable:
- 12-inch Cast-Iron or Nonstick Skillet: Essential for even cooking and browning. A cast-iron skillet provides excellent heat retention and a lovely sear, while a good nonstick pan ensures easy cleanup.
- Medium Mixing Bowl: For whisking the eggs and preparing the egg mixture.
- Whisk or Fork: To thoroughly combine the egg ingredients until light and frothy.
- Spatula: A sturdy spatula is crucial for breaking up the ground beef, stirring ingredients, and scrambling the eggs without sticking.
- Sharp Knife: For finely chopping onions, slicing mushrooms, and mincing garlic.
- Cutting Board: A stable surface for all your chopping and slicing needs.
- Measuring Spoons and Cups: For accurate ingredient measurements.
Essential Ingredients for Joe’s Special
Crafting the perfect Joe’s Special Scramble starts with fresh, quality ingredients. Here’s a breakdown of what you’ll need and some tips for best results:
- Eggs: The foundation of any great scramble! For truly fluffy results, we whisk them with a small amount of water. This simple trick adds steam during cooking, resulting in a lighter texture.
- Lean Ground Beef: We recommend using 90% lean ground beef to keep the dish wholesome without excess grease. For an added layer of flavor and a slightly different twist, you can easily substitute with homemade Italian sausage (ensure it’s Whole30 compliant if following the program). Ground turkey or chicken can also be used for a lighter option.
- Baby Spinach: Fresh baby spinach wilts down beautifully, adding vibrant color, essential nutrients, and a delicate, earthy flavor. Always use fresh for the best taste and texture.
- Crimini Mushrooms or Button Mushrooms: There’s no need for exotic fungi here! Common crimini (also known as baby bellas) or classic white button mushrooms work perfectly. They add a wonderful umami depth and a satisfying texture to the scramble. Ensure they are wiped clean, not washed, to prevent them from becoming waterlogged.
- Onion: Finely chopped onion provides a sweet and pungent aromatic base, building complex flavors as it sautés with the mushrooms.
- Garlic: Freshly minced garlic is indispensable, infusing the scramble with its distinctive pungent aroma and savory kick.
- Chives: These delicate, oniony herbs are used as a fresh garnish, adding a touch of color and a mild, fresh flavor that brightens the entire dish.
- Red Boat Fish Sauce: This might seem like an unusual addition to a scramble, but trust us, it’s a game-changer! Just a teaspoon adds an incredible depth of umami without making the dish taste fishy. It’s a secret ingredient for enhancing savory flavors, much like a chef uses salt.
- Diamond Crystal Brand Kosher Salt and Freshly Ground Black Pepper: Essential seasonings to bring out all the delicious flavors of the ingredients. Diamond Crystal is preferred by many chefs for its consistency and ease of use.
- Ghee, Avocado Oil, or Extra Virgin Olive Oil: Your choice of cooking fat. Ghee adds a rich, buttery flavor, while avocado oil is excellent for high-heat cooking due to its high smoke point. Extra virgin olive oil can also be used for its fruity notes if you prefer.
- Cayenne Pepper Sauce (like Frank’s Red Hot Original Sauce) (Optional): For those who enjoy a bit of heat, a drizzle of hot sauce at the table is highly recommended.
Step-by-Step: Crafting Your Perfect Joe’s Special Scramble
Follow these detailed steps to create a truly irresistible Joe’s Special Scramble that’s packed with flavor and satisfying goodness.
Step 1: Prepare Your Pan and Eggs
Begin by heating a 12-inch cast-iron or nonstick skillet over medium-high heat. Allow the pan to get sufficiently hot; this is key for achieving good browning and preventing sticking. While the pan is heating, crack the eggs into a medium-sized bowl.

Step 2: Whisk the Egg Mixture
To the bowl with the cracked eggs, add the water, fish sauce, about ½ teaspoon of kosher salt, and ¼ teaspoon of freshly ground black pepper. Whisk vigorously until all ingredients are well combined and the mixture is slightly frothy. This aeration helps create those wonderfully fluffy scrambled eggs. Set the bowl aside.

Step 3: Sauté Onions and Mushrooms
Once your skillet is hot and ready, add the ghee (or your preferred cooking fat). Allow it to shimmer, indicating it’s hot enough to cook. Toss in the finely chopped onions and thinly sliced mushrooms. Add another ½ teaspoon of kosher salt to help draw out moisture from the mushrooms. Cook, uncovered, stirring occasionally, until the mushrooms begin to release their liquid. This process concentrates their flavor.

Step 4: Brown the Mushrooms and Add Garlic
Continue to stir-fry the onions and mushrooms for another 5 minutes or so. The goal here is for the mushroom liquid to completely evaporate and for the mushrooms to achieve a beautiful golden-brown color, which intensifies their flavor. Next, add the minced garlic to the pan and cook for about 30 seconds, stirring constantly, until it becomes wonderfully fragrant. Be careful not to burn the garlic, as it can turn bitter.

Step 5: Cook the Ground Beef
Add the ground beef to the pan with the sautéed vegetables. Use your spatula to break up the meat into small, even pieces as it cooks. Add another ½ teaspoon of kosher salt. Continue cooking and stirring until the ground beef is no longer pink and is fully browned. Drain any excess fat if necessary, though with lean beef, this is often minimal.

Step 6: Wilt the Spinach
Now, add the baby spinach to the pan. Cook for just about 1 minute, stirring gently, until the spinach is just wilted and bright green. Avoid overcooking the spinach to maintain its texture and nutritional value. At this point, taste the entire filling mixture to check for seasoning. Adjust with more salt or pepper if needed to ensure the flavors are perfectly balanced.

Step 7: Scramble the Eggs
Pour the whisked egg mixture evenly over the beef and vegetable filling in the pan. Let the eggs sit for a few seconds to set slightly around the edges, then gently stir and scrape the bottom of the pan with your spatula. Continue to cook, stirring and folding, until the eggs are fully set to your desired consistency – typically about 3 to 5 minutes. Be careful not to overcook them, as this can make the scramble dry.

Step 8: Serve and Garnish
Once the scramble is perfectly cooked, transfer it immediately to a warm serving dish. Garnish generously with the fresh chopped chives for a burst of color and a mild oniony freshness. Serve piping hot, and if you enjoy a little extra zing, offer cayenne pepper sauce on the side. This hearty and flavorful Joe’s Special Scramble is now ready to be enjoyed as a satisfying meal any time of day!

Tips for a Flawless Scramble
- Don’t Overcrowd the Pan: When sautéing the mushrooms and onions, ensure your skillet isn’t too crowded. If it is, they’ll steam instead of brown. Cook in batches if necessary, though a 12-inch skillet usually accommodates these amounts well.
- High Heat for Mushrooms: Mushrooms love high heat to develop a deep, savory flavor. Make sure the pan is sufficiently hot before adding them.
- Watch the Garlic: Garlic cooks quickly. Add it towards the end of sautéing the vegetables and cook only until fragrant, usually 30 seconds to a minute, to prevent burning and bitterness.
- Don’t Overcook the Eggs: The key to tender, moist scrambled eggs is to remove them from the heat just as they are set but still slightly creamy. They will continue to cook slightly from residual heat.
- Taste as You Go: Seasoning is personal. Taste the beef and vegetable mixture before adding the eggs and adjust salt and pepper as needed.
Serving Suggestions and Pairings
Joe’s Special Scramble is a complete meal on its own, but it also pairs beautifully with a variety of sides to round out your plate. Here are some ideas, both Whole30-friendly and for those not following the program:
- Whole30-Friendly Sides:
- Crispy Potatoes: Pair it with my Instant Pot Crispy Potatoes for an incredibly satisfying and savory crunch.
- Crispy Bacon: A side of perfectly cooked Crispy Microwave Bacon adds another layer of classic breakfast indulgence.
- Fresh Avocado: Sliced or mashed avocado provides a creamy texture and healthy fats, complementing the richness of the scramble.
- Roasted Asparagus or Broccoli: Simple roasted green vegetables are always a good choice, adding more nutrients and a fresh counterpoint.
- Fresh Fruit Salad: For a lighter contrast, a bowl of mixed berries or sliced melon can be a refreshing addition.
- Non-Whole30 Friendly Delights: (Psst! We won’t tell anyone if you’re not doing a Whole30 and want to indulge!)
- Toasted Sourdough Bread: A thick slice of toasted sourdough is perfect for soaking up all the delicious flavors of the scramble.
- Corn Tortillas: Warm corn tortillas can turn this scramble into a fantastic breakfast taco filling.
- Hot Biscuits: Fluffy, warm biscuits are a comforting accompaniment, especially with a pat of butter.
No matter how you choose to serve it, Joe’s Special Scramble is a versatile dish that shines on any plate, at any time of day!
Storage and Reheating Tips
Joe’s Special Scramble makes for excellent leftovers, perfect for quick meals throughout the week:
- Storage: Allow any cooled leftovers to reach room temperature before transferring them to an airtight container. Store in the refrigerator for up to 3-4 days.
- Reheating on the Stovetop: For best results, reheat the scramble in a nonstick skillet over medium-low heat. Add a tiny splash of water or broth to help rehydrate and prevent drying out. Stir gently until heated through.
- Reheating in the Microwave: Place the scramble in a microwave-safe dish and heat in 30-second intervals, stirring in between, until warmed through. Be careful not to overheat, as eggs can become rubbery.
