Skillet Frittata with Tabil-Spiced Pork, Spinach, and Tomatoes

Skillet Frittata with Tabil-Spiced Pork, Spinach, and Tomatoes sits in the Breakfast section of Regbie. The card serves 2 servings. Plan on 20 minutes from the first measure to the plate. The amounts and the method are both written on this page.

Ingredients

Yield: 2 servings

  • 3 large eggs
  • Diamond Crystal kosher salt
  • Freshly ground black pepper
  • ½ tablespoon coconut oil
  • ½ cup canned diced tomatoes, drained

Method

  1. Set your toaster oven to broil. Beat the eggs with some salt and pepper in a bowl. Next, heat up your skillet over a medium burner, and when it's hot, add in the coconut oil.

  2. Tip in the leftover Tabil-spiced pork (or whatever emergency protein you have on hand) to the skillet and sauté for about a minute until the meat is warmed through.

  3. Tip in the diced tomatoes to the pan and stir that for an additional minute.

  4. Tip in the egg mixture and let the bottom of the frittata set for a few minutes. No need to stir!

  5. Pop the skillet in your toaster oven and broil the frittata for about 10 minutes or until the eggs are cooked through, the middle is set and the edges are puffed and browned.
