Welcome to the Nom Nom Paleo monthly cooking challenge—a friendly, hands-on culinary event designed to get you excited about cooking and sharing what you make in your own kitchen.

Each month, I highlight three accessible, flavor-forward recipes. You choose one recipe to cook, photograph the finished dish, and submit that photo for a chance to win. It’s a simple, low-pressure way to try something new, sharpen your skills, and show off a home-cooked meal—plus there’s a reward for one lucky winner each month. Many people find they were already planning to cook one of these recipes anyway, so why not join the challenge?

How to participate!

Choose ONE of these recipes to cook:

Sheet Pan Salmon with Pesto and Asparagus

Shrimp Fajitas

IP Kalua Pig

Take a picture of the finished dish and email it!

Once your chosen recipe is plated and ready, take a clear photo that shows the food well—natural light and a simple background usually help. Email your photo to cookingchallenge@nomnompaleo.com with the recipe name as the subject line. Make sure your submission arrives by 11:59 pm PT on September 30, 2026 to be eligible for this month’s drawing.

Wait to see if you win!

After the deadline, we’ll review submissions and select one winner the following week. The winner will be contacted by email and will receive a $100 Amazon gift certificate. We announce winners promptly so you’ll know if your entry was chosen—be sure the email address you use for submissions is one you check regularly.

Need more deets?

For full contest details, eligibility requirements, and more on how winners are selected, visit the Nom Nom Paleo Cooking Challenge home page. That page includes official contest rules, deadlines, and answers to frequently asked questions.

You can also review the Official Contest Rules for specific legal and procedural terms that govern the challenge. Reading the rules will help ensure your entry meets all requirements and avoid common submission mistakes.

Tips for a great submission: shoot your photo in daylight when possible, use a clean plate and tidy background, and capture the dish at a flattering angle. If you adapted the recipe for dietary preferences or ingredient availability, feel free to note that in your email—clear context helps us appreciate your effort.

This monthly challenge is designed to be welcoming for cooks at many skill levels. Whether you’re making a quick weeknight supper or experimenting with a new technique, we hope this encourages you to get in the kitchen and share your results. Good luck, and happy cooking!

These days this is my go-to way to cook chicken breasts reliably and quickly at home. Thin cutlets, good seasoning, a hot skillet, and a light smear of mayonnaise deliver juicy chicken in minutes.

Boneless, skinless chicken breasts often get a bad rap for being dry, bland, and easy to overcook.

I used to avoid them, but now that I prioritize protein, I’ve experimented until I found a fast, foolproof method that produces moist, flavorful results every time.

After plenty of trial and error, I stick with thin, evenly cut chicken, a hot skillet, generous seasoning, and a thin coat of mayo. I often meal-prep a few pounds because it’s quick, dependable, and still tasty straight from the fridge. With everyone trying to eat more protein, this keeps well-stocked in my kitchen.

No brining, no oven baking, and no chalky leftovers—just simple, reliable chicken.

Why most chicken breast ends up dry

Most chicken breast mistakes come from a few common issues:

Uneven pieces that cause thin edges to overcook before the center is done.

Too-low heat, which leads the meat to steam instead of sear.

Cooking too long “to be safe,” which dries the meat out.

This method avoids all of those problems by producing thin, evenly cooked cutlets with a quick, hot sear.

Ingredients

Boneless, skinless chicken breasts: Smaller breasts (about 6–8 ounces) are ideal because they’re easier to slice into even cutlets. If your knife isn’t sharp, buy supermarket cutlets or have the butcher slice them, then pound them thin so they’re uniform.

Mayonnaise: A thin layer helps the seasoning stick, promotes browning, and protects the meat from drying while it cooks. It won’t leave a noticeable mayo flavor.

Seasoning: Salt alone works fine, but use your favorite spice blend if you want more flavor. A simple mix of salt, garlic powder, onion powder, and smoked paprika is also great.

How to make juicy chicken breast

Thin, even cutlets cook better

Slice each chicken breast horizontally into thin cutlets using a sharp knife. Press the breast flat with your palm and slice parallel to the cutting board so you create two thinner pieces. If the breast is large or uneven, make additional cuts so all pieces are similar in thickness.

Lightly pound the cutlets with a meat pounder, small cast-iron skillet, or rolling pin until they are an even thickness. Even thickness is the key to juicy, evenly cooked chicken.

Season generously

Sprinkle seasoning from several inches above the cutlets for even coverage, then flip and season the other side. Thin cutlets need flavor, so be generous.

The mayo trick (don’t skip!)

Brush a very thin layer of mayonnaise on both sides of each cutlet. Use a small spatula for a smooth, even coat. The mayo helps the chicken brown, keeps seasoning in place, and shields the meat from drying out. You won’t taste the mayo in the finished dish.

If you prefer not to use mayo you can skip it, but it does make the method more forgiving and consistent.

A hot pan for best results

Heat a heavy-bottomed 12-inch skillet over medium-high heat until hot. Use stainless steel, cast iron, or enameled cast iron for the best browning. A nonstick skillet works but won’t brown as well.

There’s no need to add extra oil—the mayo provides enough fat to prevent sticking. Place the cutlets in a single layer and leave them undisturbed for about 90 seconds so a crust can form and the meat will release from the pan easily.

Flip and cook the second side for another 90 seconds. Then continue flipping every 30–60 seconds until the cutlets are nicely browned and the thickest part reaches about 150–155°F.

Take it off early and let it rest

Pull the chicken when the thickest part reads 150–155°F and let it rest for about 5 minutes. Carryover cooking will finish the job while the juices redistribute, keeping the chicken moist. Thin cutlets reach this temperature quickly, so check with a thermometer.

How to store leftover chicken breast

Let the chicken cool completely, then store in an airtight container in the fridge for up to 4 days. You can keep the breasts whole or slice them for easier meal prep. The chicken is versatile for salads, bowls, lettuce wraps, soups, or a quick protein snack straight from the fridge.

For longer storage, freeze cooled chicken in a freezer-safe container or bag for up to 3 months. Thaw overnight in the fridge or pack frozen slices in a lunchbox in the morning; they often thaw by lunchtime. Reheat gently to avoid drying out.

Do you remember Hamburger Helper from childhood? This ground beef and potato recipe will bring back those familiar flavors, but it’s made with real, recognizable ingredients. It’s a nourishing, naturally gluten-free, and affordable dinner option that offers all the comforting taste of the boxed classic without any of the mystery additives. If you’re looking for a quick, satisfying, and budget-friendly meal, this is it.

An overhead shot of the finished skillet ground beef and potatoes dish, ready to serve.

I’m always on the hunt for simple and quick home-cooked meals that don’t drain my energy, empty my wallet, and still taste incredible. This recipe checks all those boxes and more.

What makes this one-skillet meal a weeknight champion is the substantial flavor and nutrition it delivers with minimal effort. Tomato paste, Magic Mushroom Powder (optional, but adds great umami!), and nutritional yeast work together to create a deep, savory flavor. A creamy, dairy-free sauce binds everything together beautifully right in the pan. To keep things ultra-convenient, this recipe uses frozen mixed vegetables and frozen hash browns, so there’s no washing or chopping involved – just open the bags and add them in.

Just before serving, I like to stir in a handful of fresh baby spinach for a pop of color and a boost of nutrients. It wilts almost instantly and adds a touch of freshness without requiring any extra effort. The entire meal is ready in 45 minutes or less, cooks in a single pan, and the leftovers reheat wonderfully, tasting even better the next day. It’s the perfect solution for busy weeknights.

Why This Ground Beef and Potato Skillet is a Winner

This recipe is designed for real life. It’s a one-pan wonder, so cleanup is easy. No oven is needed, and the ingredient list is short and practical. Frozen vegetables and hash browns are time-savers (no washing or cutting!), and the shredded potatoes naturally thicken the sauce as they cook. It’s a win-win situation!

This dish is hearty, adaptable, and incredibly satisfying—exactly what you crave on a busy weeknight when you still want to nourish yourself (or your family) well. It’s comfort food without the fuss.

A Healthy Take on a Classic: Ground Beef and Potatoes

At its heart, Hamburger Helper is all about ground beef, a hearty starch, and a flavorful sauce. This homemade version maintains that comforting foundation but substitutes potatoes for pasta or rice and uses real ingredients to build flavor instead of relying on pre-made seasoning packets.

The shredded potatoes cook quickly and contribute to thickening the sauce, making this dish naturally gluten-free while still delivering that nostalgic, homey flavor we all love. It’s a guilt-free way to enjoy a childhood favorite.

Ingredients for Ground Beef and Potato Skillet

The raw ingredients to make an easy one-skillet ground beef and potatoes recipe that is a wholesome remake of Hamburger Helper.

Avocado Oil: Used for browning the onion and beef. Any neutral, high-heat cooking oil works well here.

Yellow Onion: This is the only ingredient that needs to be chopped. It adds sweetness and depth as it cooks with the beef. Feel free to use any type of onion in place of yellow if that’s what you have on hand.

Lean Ground Beef (90/10): Hearty, satisfying, and budget-friendly. Lean beef prevents the skillet from becoming overly greasy, but you can drain off any excess fat if you use a fattier ground beef. Ground turkey, ground chicken, or even ground pork can also be used.

Tomato Paste: A small amount adds a lot of richness and contributes to the deep, savory flavor base.

Magic Mushroom Powder: My signature seasoning blend is where much of the umami flavor comes from. You can make your own or buy it online. If you don’t have it, simply season with kosher salt and freshly ground black pepper.

Italian Herb Blend: Adds a subtle herbaceous background note, but the dish is still delicious without it.

Garlic: Just enough to boost the flavor without overpowering the other ingredients. Of course, you can always add more if you like!

Full-Fat Coconut Milk: Creates a creamy, dairy-free sauce. Don’t worry—the finished dish won’t taste coconut-y. Unflavored Nutpods also work great. I haven’t tried almond milk but I think it might be a little too thin. Cow’s milk can be substituted if you tolerate dairy.

Chicken Bone Broth or Stock: Adds savory depth and helps thin the sauce, ensuring everything cooks evenly.

Nutritional Yeast: Provides a cheesy, savory flavor without dairy and helps round out the sauce.

Frozen Mixed Vegetables: A total weeknight essential! Any blend works here – peas and carrots, California blend, or classic mixed vegetables. No thawing, washing, or chopping is needed.

Frozen Shredded Potatoes (Hash Browns): These cook quickly and naturally thicken the sauce as the skillet simmers. Look for hash browns made with just potatoes (or potatoes and salt). No need to thaw or drain them; just grab the bag from the freezer and pour them in! You can also shred a pound of peeled Yukon Gold potatoes if you don’t have hash browns.

Baby Spinach: Stirred in at the very end for a pop of color and extra nutrients. It wilts instantly and requires no washing or chopping.

Freshly Ground Black Pepper

Recipe: Easy Ground Beef and Potato Skillet

Ingredients

1 tablespoon avocado oil or other high-temperature cooking oil

1 medium yellow onion, diced

2 pounds lean ground beef (90/10 works great)

2 tablespoons tomato paste

2 teaspoons Magic Mushroom Powder (or Diamond Crystal kosher salt)

1 teaspoon Italian herb blend (optional)

3 garlic cloves, minced

1 cup full-fat coconut milk

1 cup chicken broth or bone broth

3 tablespoons nutritional yeast

16 ounces frozen mixed vegetables

16 ounces frozen hashed browns (or peeled and shredded Yukon Gold potatoes)

5 cups baby spinach

Freshly ground black pepper, to taste

Instructions

Heat a large, deep 12-inch skillet over medium-high heat. When the pan is hot, swirl in the avocado oil. Add the onion and cook until softened, about 3 minutes.

Add the ground beef and cook, breaking it up with a spatula, until no longer pink and most of the liquid has cooked off, about 6 to 8 minutes.

Next, stir in the tomato paste, Magic Mushroom Powder (or salt and pepper), Italian herb blend (if using), and garlic. Cook for about one minute, or until fragrant.

In a large measuring cup or bowl, whisk together the chicken bone broth, coconut milk, and nutritional yeast until smooth. Pour the sauce into the skillet, scraping up any browned bits from the bottom.

Add the bag of frozen mixed vegetables and frozen shredded potatoes directly to the skillet (do not thaw). Stir well to coat everything in the sauce.

Increase the heat to high and cook, stirring occasionally, until the mixture comes to a steady simmer. Reduce the heat to medium or medium-low, or just enough to maintain a simmer. Cover the skillet and cook for 6 to 8 minutes, stirring once halfway through, or until the potatoes are tender and the frozen veggies are cooked through.

Remove the lid and continue to simmer uncovered for about 5 minutes, stirring occasionally, until the sauce reduces and thickens to a saucy consistency.

Add the baby spinach and stir just until wilted, about 1 to 2 minutes.

Grind some freshly ground pepper on top and mix it in. Take a bite of the finished dish and adjust seasoning, with extra Magic Mushroom Powder or salt, if needed. Remove from heat and serve hot.

Notes

Frozen vegetables and hash browns go straight from the freezer—no washing, no chopping, no squeezing.

Don’t squeeze shredded potatoes; their natural starch helps thicken the sauce.

The finished dish should look saucy, not dry.

Leftovers reheat beautifully and thicken a bit more overnight.
