The Ultimate Paleo Cinnamon Rolls
As many longtime followers know, I typically shy away from baking. Crafting **paleo treats** and desserts often feels like a precise science that I’m not always equipped to tackle. That’s why I was absolutely thrilled to discover Michele Rosen’s phenomenal cookbook, Paleo Baking At Home. Michele, the brilliant recipe developer behind the incredibly popular blog Paleo Running Momma, has a knack for creating recipes that are both simple to follow and utterly decadent. While her savory creations are fantastic, it’s her delightful **paleo dessert recipes** that I turn to when I need a sweet fix. And these **easy cinnamon rolls in a muffin pan** from her new cookbook? They are a shining example of her genius. They deliver all the warmth and comfort of traditional cinnamon rolls, but with wholesome, **grain-free ingredients** that fit perfectly into a paleo lifestyle. You won’t believe how simple it is to achieve such a luxurious and satisfying result!
The Muffin Pan Genius Hack
Michele’s brilliant approach to baking individual cinnamon rolls in a greased muffin pan is truly a game-changer. This simple yet effective technique ensures several fantastic outcomes that elevate these **gluten-free cinnamon rolls** to perfection. Firstly, it cleverly prevents the rolls from spreading excessively as they bake, maintaining their beautiful, classic spiral shape. This method also guarantees that the edges achieve an exquisitely **even browning**, adding a delightful texture contrast. Every roll emerges from the oven with a slightly crisp exterior that gives way to a wonderfully **tender crumb** on the inside – precisely how a perfect cinnamon roll should be! Beyond the textural benefits, the muffin tin naturally guides you into creating **perfectly sized portions**, ensuring each treat is just right without being overly indulgent. This means you can savor every bite without feeling overwhelmed, making them an ideal **healthy paleo treat** for any time of day.
Ingredient Insights and Substitutions
One of the most common questions in baking, especially **paleo baking**, revolves around ingredient substitutions. While I appreciate the desire to adapt recipes, particularly for dietary needs or pantry availability, baking is fundamentally a science that demands precise measurements and specific ingredient properties. Unlike cooking, where a pinch of this or a dash of that often works, altering key components in baking can significantly impact the final texture, structure, and taste. For instance, questions about using a flax egg in place of a regular egg, or **coconut flour** instead of **almond flour**, are common, but these flours behave very differently. Almond flour provides a rich, moist texture and good structure, while coconut flour is incredibly absorbent and requires much more liquid, leading to very different results. This is precisely why I am so grateful to Michele Rosen; she has meticulously done all the testing, taking the guesswork out of **grain-free baking**, and has generously allowed me to share her perfected recipe with you.
However, Michele does offer some flexibility: you can generally substitute **tapioca flour** with **arrowroot flour** in most of her recipes, provided the volume is up to one cup. She advises that going above this amount might alter the texture, but in my experience, using arrowroot powder in this specific **paleo cinnamon roll recipe** yielded delicious results with no noticeable compromise. Baking is an evolving art, and experimentation can lead to wonderful discoveries. If you do attempt any ingredient substitutions in this recipe and find success, please do share your insights and results in the comments section below! Your experiences can greatly help fellow **paleo bakers** on their journey.
Freezing and Reheating Your Paleo Cinnamon Rolls
One of the most appealing aspects of these **easy paleo cinnamon rolls** is their incredible freezer-friendliness, making them perfect for meal prep or for having a delicious treat on hand at a moment’s notice. Yes, you absolutely can freeze these cinnamon rolls! The best way to store any leftover unfrosted rolls is in a sealed, airtight container in the freezer. They will maintain their quality for up to two months, ready to be enjoyed whenever you desire a warm, comforting bite. This is fantastic for busy mornings or unexpected guests!
When you’re ready to indulge, simply reheat the frozen baked rolls. Place them in a preheated 300°F (150°C) oven for approximately 5-7 minutes, or until they are warmed through to your liking. The gentle heat will bring back their tender texture and fragrant aroma. The final touch that truly makes these special is spreading the delectable icing on top while the rolls are still warm. The warmth of the roll will slightly melt the icing, allowing it to beautifully seep into the crevices, creating an even more luscious experience. You’ll definitely be thanking your past self for saving some of these delightful **gluten-free treats** for later!
Ingredients
Gather your ingredients to create these wholesome and delicious paleo cinnamon rolls. Precision is key in baking, especially with grain-free flours, so make sure to measure accurately.
For the Dough:
- Blanched almond flour: The primary base for our grain-free dough, providing a fine texture.
- Tapioca flour: Also known as tapioca starch, essential for elasticity and a chewy texture, plus extra for dusting.
- Baking soda: Our leavening agent for a soft, fluffy crumb.
- Fine sea salt: To balance the sweetness and enhance flavors.
- Light coconut milk: Ensure it’s well-blended before measuring for consistent moisture.
- Melted ghee: Adds richness and a buttery flavor without dairy.
- Raw honey: A natural sweetener that also contributes to the dough’s moisture and golden color.
- Pure vanilla extract: For an aromatic depth of flavor.
- Large egg: At room temperature, to bind the dough and provide structure.
- Avocado or coconut oil spray: For greasing the muffin pan and preventing sticking.
For the Irresistible Filling:
- Ghee: At room temperature, to create a smooth, spreadable base for the cinnamon.
- Raw honey: At room temperature, for a natural, sticky sweetness.
- Ground cinnamon: The star spice, providing that signature cinnamon roll aroma and taste.
For the Sweet Glaze Topping:
- Powdered maple sugar or Swerve confectioners sweetener: Choose your preferred paleo-friendly powdered sweetener for a smooth icing.
- Palm oil shortening or ghee: At room temperature, for richness and a creamy texture in the frosting.
- Pure vanilla extract: To enhance the sweetness of the glaze.
- Coconut or unsweetened almond milk: To achieve the perfect drizzling consistency for your icing.
How to Make Paleo Cinnamon Rolls: Step-by-Step Guide
Get ready to create these magnificent **paleo cinnamon rolls**! Follow these detailed steps for a successful and delicious baking experience.
Preparing the Dough:
-
In a large mixing bowl, combine the dry ingredients: meticulously whisk together the blanched almond flour, tapioca flour, baking soda, and fine sea salt until thoroughly blended. This ensures even distribution of leavening and seasoning.

Combine all dry ingredients thoroughly. -
Next, introduce the wet ingredients to the bowl. Add the light coconut milk (ensuring it’s well-blended), melted ghee, raw honey, and pure vanilla extract. Mix these into the dry ingredients until just combined. The mixture will start to form a thick, cohesive batter.

Integrate the wet ingredients until a consistent batter forms. -
Finally, crack in the large egg. Continue mixing all the ingredients together until a sticky, yet uniform dough forms. It’s important not to overmix, as this can lead to a tougher dough.

Add the egg and mix until the dough is uniformly sticky. -
Observe the consistency of your dough. It should be noticeably sticky but should hold its shape. If it feels too wet, a tiny bit more tapioca flour can be added. Cover the bowl and chill the dough in the refrigerator for 10 to 15 minutes. This crucial step firms up the dough, making it much easier to handle and shape later.

The dough should be sticky but manageable after chilling. -
While the dough is chilling, preheat your oven to 350°F (177°C). Prepare a standard 12-well muffin pan by generously spraying each well with avocado or coconut oil spray. (Pro Tip: Spray the muffin pan over your open dishwasher door! Any accidental overspray will be conveniently cleaned away when you run the dishwasher, saving you cleanup time!)

A clever way to grease your muffin pan without making a mess. -
On a large piece of parchment paper, draw a 14 x 6 inch rectangle. This will serve as a guide for rolling out your dough to the perfect dimensions.

-
Flip the parchment paper over so the traced rectangle is still visible but the pencil/pen marks don’t touch the dough. Place this paper on a large cutting board or a clean, flat surface.

-
Lightly sprinkle about 1 tablespoon (7 g) of tapioca flour over the parchment paper, focusing on the area within and around your traced rectangle. This will prevent the dough from sticking.

-
Retrieve the chilled dough from the refrigerator. Place it in the center of the tapioca-dusted parchment paper. Using hands lightly dusted with tapioca flour, press and shape the dough with the heels of your hands, working it evenly into the 14 x 6 inch rectangle. Aim for a consistent thickness across the entire surface.

Shape the dough evenly into a rectangle using floured hands.
Crafting the Irresistible Filling:
-
In a small, separate bowl, combine the room-temperature ghee, raw honey, and ground cinnamon. Mix these ingredients thoroughly until they form a thick, lump-free paste. This will be the sweet, spiced heart of your cinnamon rolls.

Mix filling ingredients until smooth and uniform.
Assembling and Baking the Rolls:
-
Carefully and evenly spread the cinnamon-ghee-honey filling in a thin layer over the entire surface of the rectangular dough. Ensure the filling extends to the edges for maximum flavor in every bite.

Spread the flavorful filling evenly. -
Using the parchment paper as your guide and aid, tightly roll the dough along its long side, forming a neat cylinder. Once rolled, place the dough (still on the parchment paper) into the freezer for 5 to 10 minutes. This quick chill will firm up the roll, making it much easier to slice cleanly without squishing.

Roll tightly and chill for easier slicing. -
Remove the chilled roll from the freezer. Using a sharp, non-serrated knife, carefully slice the roll into 12 even pieces. For the best presentation and baking, aim for uniform thickness. Place each sliced piece, flat side down, into the greased wells of your muffin tin.

Slice into even portions and place in muffin tin.
Arrange the rolls carefully in the muffin pan. -
Bake the rolls in your preheated oven for 16 to 18 minutes. For even cooking and browning, remember to rotate the tray at the halfway point of the baking time. The rolls are perfectly cooked when their tops are beautifully golden brown and a toothpick inserted into the center of a roll comes out clean, indicating no raw dough remains.

Rotate the tray for perfectly even baking.
Baked to golden perfection!
Preparing the Delicious Glaze:
-
While your wonderful cinnamon rolls are baking, it’s the perfect time to prepare the sweet and creamy icing! In a medium-sized bowl, whisk together the powdered maple sugar (or Swerve confectioners sweetener), palm oil shortening (or ghee), and pure vanilla extract. Mix until the ingredients are well combined and smooth.

Start preparing your creamy, sweet icing. -
Gradually add the coconut milk (or unsweetened almond milk) to the mixture, stirring continuously. Add the milk slowly, spoonful by spoonful, until you achieve your desired icing consistency – whether you prefer a thick, spreadable glaze or a thin, drizzly topping.

Achieve the perfect consistency for your delicious glaze.
Finishing and Enjoying Your Rolls:
-
Once baked, carefully transfer the warm cinnamon rolls from the muffin pan to a wire rack, ideally placed over a rimmed baking sheet. This allows for even cooling and catches any excess icing.

Transfer rolls to a wire rack for cooling and frosting. -
Generously drizzle or spread your prepared icing over the rolls while they are still warm. The warmth helps the icing melt slightly, creating a beautiful, glossy finish and allowing the sweetness to soak into the rolls. Now, it’s time to dig in and savor your incredible homemade **paleo cinnamon rolls**!

Drizzle with icing and enjoy your delicious creation!
Pro Tips for Perfect Paleo Cinnamon Rolls
To ensure your **gluten-free cinnamon rolls** turn out perfectly every time, here are a few extra pointers:
- Room Temperature Ingredients: For the dough, ensure your egg is at room temperature. This helps it emulsify better with the other ingredients, creating a smoother, more uniform dough. Similarly, room temperature ghee and honey for the filling and topping will ensure they blend smoothly without lumps.
- Don’t Skip the Chill: Chilling the dough twice (once after mixing, once after rolling) is crucial. It makes the sticky paleo dough much more manageable for rolling and slicing, preventing frustration and ensuring beautifully defined spirals.
- Even Thickness: When pressing out the dough, aim for as even a thickness as possible. This ensures consistent baking and that all parts of the roll are perfectly tender.
- Sharp Knife for Slicing: A very sharp, non-serrated knife is your best friend when slicing the chilled dough log. This helps create clean cuts and prevents the rolls from squishing, maintaining their shape.
- Adjusting Icing Consistency: When making the glaze, add the coconut or almond milk slowly. You want a consistency that’s thick enough to cling to the rolls but still pourable. If it’s too thick, add more milk a teaspoon at a time; if too thin, a tiny bit more powdered sweetener can help.
- Don’t Overbake: Paleo baked goods can dry out quickly if overbaked. Watch for golden brown tops and use the toothpick test. They will continue to set slightly as they cool.
Storage and Meal Prep
These **paleo cinnamon rolls** are fantastic for **meal prepping** or keeping on hand for a spontaneous treat. To preserve their freshness and flavor, simply freeze any unfrosted leftover cinnamon rolls in an airtight container for up to 2 months. This makes them an ideal make-ahead breakfast or snack. When you’re ready to enjoy them, reheat the frozen baked rolls in a 300°F (150°C) oven for about 5-7 minutes, or until they are warmed through and fragrant. Spreading the delicious icing on top while the rolls are still warm will give you that irresistible gooey texture. You’ll thank yourself for having these delightful, wholesome treats ready!
