The Easiest Paleo and Keto Meatloaf You’ll Ever Make!
Creating a paleo meatloaf recipe that’s not only incredibly simple and economical but also bursting with flavor was my primary goal. I wanted a dish I could whip up using common staples from my fridge and freezer, and I am absolutely thrilled with the results! This meatloaf isn’t just easy; it’s a resounding hit with the kids, who barely notice that a significant portion of it is cleverly disguised vegetables. I suspect their distraction comes from their enthusiastic scramble for the irresistible crispy bacon slices adorning the top!
This recipe champions convenience without compromising on taste or health benefits. It adheres strictly to paleo and keto guidelines, making it an ideal choice for anyone following these dietary paths. The careful selection of ingredients ensures it’s friendly for those avoiding nuts, gluten, and dairy, providing a safe and delicious option for a wide range of dietary needs. The robust flavors and satisfying texture make it a dish you’ll want to add to your regular rotation.

Why This Meatloaf is a Family Favorite
Beyond its dietary compliance, what truly makes this meatloaf a family favorite is its incredible versatility and universal appeal. It’s rare to find a meal that satisfies both strict dietary requirements and the discerning palates of children, but this recipe manages just that. The combination of savory ground beef, flavorful spices, and nutrient-packed vegetables creates a symphony of taste that even the pickiest eaters enjoy. The bacon topping isn’t just for show; it infuses the meatloaf with a smoky, salty crispness that adds an extra layer of deliciousness and an exciting texture contrast.
Parents will appreciate how effortlessly this dish allows them to incorporate more vegetables into their family’s diet without any complaints. The finely chopped spinach and riced cauliflower blend seamlessly into the meat mixture, becoming virtually undetectable. This “hidden veggie” strategy is a game-changer for those aiming for healthier eating habits. Furthermore, the ability to prepare it as an “all-in-one” meal simplifies dinner time significantly, reducing the need for multiple side dishes and making clean-up a breeze. It’s a smart, tasty, and practical solution for busy weeknights.
Cauliflower Rice to the Rescue: The Perfect Low-Carb Filler
Traditionally, meatloaf recipes call for breadcrumbs to act as a filler, helping to stretch the meat further and provide a lighter, less dense texture. For those on paleo or keto diets, breadcrumbs are off-limits. Many alternative recipes suggest almond flour, but my goal was to create a wheat-free and entirely nut-free filler to ensure everyone could enjoy this dish while also improving its consistency. My inspiration struck while flipping through an old cookbook, where a meatloaf recipe recommended using leftover rice as a binder. This immediately sparked the idea to use riced cauliflower, and it proved to be an absolute revelation!
Riced cauliflower works wonderfully as a filler in this recipe. It mimics the texture effect of traditional breadcrumbs without adding unnecessary carbs or allergens. The best part? The kids don’t even notice the addition of extra vegetables, making it a fantastic way to boost nutrient intake covertly. Through various experiments, I’ve discovered that fresh riced cauliflower yields superior results compared to frozen. Fresh cauliflower releases less liquid during cooking, resulting in a meatloaf with a firmer, more consistent texture. If you opt for frozen riced cauliflower, be prepared for a bit more residual liquid in the pan, which can be easily drained before serving. For optimal texture, I highly recommend using fresh whenever possible.

Fresh vs. Frozen Spinach: Which is Best for Meatloaf?
When it comes to incorporating greens into your meatloaf, both fresh and frozen spinach (or kale) can work beautifully, though frozen often offers a significant convenience factor. My personal preference leans towards thawed frozen spinach, specifically two 10-ounce packs. Why? Simply put, I appreciate the ease! Frozen greens eliminate the need for washing, drying, or chopping, saving precious time in the kitchen. I always keep bags of frozen spinach or kale in my freezer, ready to be deployed in various recipes. For this meatloaf, if you plan ahead, simply transfer the frozen greens to your refrigerator the night before to allow them to thaw completely.
However, if you prefer to use fresh spinach, you certainly can, but be mindful of the quantity. Fresh spinach cooks down dramatically, so you’ll need approximately 2 pounds to achieve the same volume and nutrient density as the frozen equivalent. To prepare fresh spinach for your meatloaf, start by thoroughly rinsing and draining the leaves. Then, toss them into a hot skillet, cooking them solely in the water that clings to their leaves. Once the spinach has wilted significantly, remove it from the pan, allow it to cool slightly, and then finely chop it. It’s crucial to cool the chopped spinach to room temperature before mixing it into the meatloaf blend; adding hot spinach could partially cook the eggs, altering the meatloaf’s final texture.
Exploring Other Ground Meat Options
While this recipe shines with ground beef, its versatility allows for successful substitutions with other ground meats. The key is to select a ground meat that isn’t excessively lean, as fat content significantly contributes to the moisture, flavor, and overall texture of a delicious meatloaf. I typically opt for 85% lean ground beef, which strikes a perfect balance.
For those looking to experiment, a fantastic option is to use a combination of ground pork and beef. This blend often results in an even richer flavor profile and a wonderfully tender texture, making for an exceptionally delicious meatloaf. If you prefer to use ground turkey, it’s absolutely viable, but I strongly advise against using the 99% lean varieties. Super lean turkey can result in a dry and crumbly meatloaf. Instead, choose ground turkey that has a higher fat percentage, or consider mixing it with a fattier ground meat like pork to ensure your meatloaf remains moist and flavorful. The goal is to keep some fat in the mixture to prevent dryness and maximize taste.
Essential Ingredients for Your Paleo & Keto Meatloaf
- Ground Beef: I find that 85% lean ground beef works best, providing ample flavor and moisture. However, feel free to substitute with another ground meat. If using ground turkey, choose a variety that’s not too lean (avoid 99% lean) to prevent a dry meatloaf. A mixture of ground beef and pork is also excellent.
- Frozen Spinach or Frozen Curly Kale: The convenience of frozen greens cannot be overstated! They save you time on washing and chopping. Just thaw and squeeze out the liquid. If you prefer fresh, see our notes above on preparation and quantity.
- Riced Cauliflower: This is our brilliant low-carb, nut-free filler. Fresh riced cauliflower is preferred over frozen for a better texture as it releases less water. If you have leftover mashed cauliflower, that can also work as a substitute, offering a slightly different but still delicious consistency.
- Onion: Finely chopped onion adds a foundational aromatic flavor that complements the beef perfectly.
- Garlic: Freshly minced garlic cloves provide a pungent depth of flavor, essential for any good meatloaf.
- Eggs: Large eggs act as a binding agent, holding all the ingredients together and contributing to the meatloaf’s structure.
- Bacon: Do not skip the bacon! Laying slices of bacon over the top of the meatloaf is crucial. As it cooks, the bacon drippings infuse the meatloaf with incredible smoky flavor, and the crispy topping is absolutely irresistible.
- Extra Virgin Olive Oil, Ghee, or Avocado Oil: Used for greasing the pan, ensuring your meatloaf doesn’t stick and is easy to remove.
- Magic Mushroom Powder or Diamond Crystal Brand Kosher Salt: I firmly believe that Magic Mushroom Powder is the secret ingredient that elevates this meatloaf to extraordinary levels. The mushrooms are completely undetectable, yet they impart an incredible depth of umami flavor that makes all the difference. If you don’t have it, a good quality kosher salt will still yield a tasty result.
- Marinara Sauce: While optional, warming up some marinara sauce to serve on the side provides a wonderful tangy accompaniment. Ketchup or your favorite barbecue sauce also make excellent choices for dipping or drizzling.
Step-by-Step Guide: How to Make Paleo and Keto Meatloaf
Creating this delicious paleo and keto meatloaf is a straightforward process, designed for ease and efficiency. Follow these steps for a perfectly cooked, flavorful meatloaf every time.
Preparation
- Preheat Oven & Prepare Pan: Begin by preheating your oven to 350°F (175°C) and positioning an oven rack in the middle. Generously grease the interior of a 9×5-inch loaf pan using a brush or paper towel with olive oil, ghee, or avocado oil. As an alternative, you can line the pan with parchment paper, leaving an overhang on the sides, which makes lifting the cooked meatloaf out incredibly easy.
- Prepare the Greens: Take your thawed frozen spinach or kale. Wrap it tightly in a clean kitchen towel or cheesecloth and squeeze out as much excess liquid as possible. This step is crucial to prevent a watery meatloaf. Transfer the well-drained greens to a large mixing bowl. You can discard the reserved green liquid or add it to a soup for extra nutrients.
- Combine Ingredients: To the bowl with the dried greens, add the ground beef, finely chopped onions, riced cauliflower, minced garlic, and Magic Mushroom Powder (or Diamond Crystal kosher salt). In a separate small bowl, whisk the eggs lightly, then pour them into the large mixing bowl with the other ingredients.
- Mix Thoroughly: Using your hands, gently but thoroughly mix all the meatloaf ingredients until they are just combined. Be careful not to overmix, as this can lead to a dense and tough meatloaf. Mix just enough until everything is evenly distributed.
- Form the Meatloaf: Transfer the meat and veggie mixture into the prepared loaf pan. Using your hands, gently press and flatten the top to create an even surface. Then, lay the three slices of bacon neatly across the top of the meatloaf. As it bakes, the bacon will crisp up and render its fat, infusing the meatloaf with incredible flavor.

Baking & Finishing
- Bake the Meatloaf: Place the loaf pan in the preheated oven and bake for approximately 50 minutes. The meatloaf is cooked through when it starts to pull away from the sides of the pan and its internal temperature, measured with a meat thermometer, reaches at least 160°F (71°C).
- Crisp the Bacon: Once the meatloaf is cooked, turn on the broiler. Cook the meatloaf under the broiler for an additional 5 to 10 minutes, or until the bacon on top becomes wonderfully crispy and golden brown. Keep a close eye on it to prevent burning.
- Rest Before Slicing: Remove the meatloaf from the oven and let it rest in the pan for 10 minutes. This resting period is crucial as it allows the juices to redistribute, ensuring a moist and tender meatloaf that holds its shape beautifully when sliced.
- Slice and Serve: Finally, slice the meatloaf into thick, even pieces. Serve it warm with a side of marinara sauce, if desired, or your preferred condiment. Enjoy your delicious, homemade paleo and keto meatloaf!

Serving Suggestions: What to Pair with Your Meatloaf
This paleo and keto meatloaf is a complete meal in itself, thanks to the hidden vegetables, but it truly shines when accompanied by simple, fresh side dishes. The rich, savory flavor of the meatloaf pairs wonderfully with lighter, vibrant accompaniments that balance the meal. Here are some excellent ideas:
- Green Salad: A crisp, fresh green salad with a light vinaigrette is always a fantastic choice. The acidity and freshness cut through the richness of the meatloaf, offering a refreshing contrast.
- Broiled Asparagus: Asparagus is a quick and elegant side. You can easily cook them in the oven while your meatloaf is resting, maximizing oven efficiency. A drizzle of olive oil, salt, and pepper is all they need.
- Roasted Broccoli or Green Beans: Similar to asparagus, roasting these vegetables brings out their natural sweetness and gives them a pleasing tender-crisp texture.
- Sautéed Mushrooms: Earthy sautéed mushrooms can complement the umami flavors in the meatloaf, especially if you used Magic Mushroom Powder.
- Yummy Vegetable Soup: For a comforting meal, a light vegetable soup, such as a Carrot Cardamom Soup, makes an excellent pairing. The warmth and subtle spices of the soup create a harmonious and satisfying dinner.
- Cauliflower Mash: If you’re looking for a hearty, low-carb alternative to mashed potatoes, a creamy cauliflower mash is an ideal companion.
Leftover Meatloaf Storage Tips
One of the many joys of this easy meatloaf recipe is how well it holds up as leftovers, making it perfect for meal prepping. Proper storage ensures you can enjoy its deliciousness for days to come:
- Refrigeration: Store any leftover meatloaf in an airtight container in the refrigerator for up to 4 days. This makes it ideal for healthy lunches or quick dinners throughout the week.
- Freezing: For longer storage, slices of meatloaf can be tightly wrapped individually in plastic wrap, then placed in an airtight freezer-safe container or bag. It will keep well in the freezer for up to 4 months. Thaw overnight in the refrigerator before reheating.
- Pro Tip for Meal Prep: To maximize your effort, I highly recommend doubling the recipe and making two loaves at once. The preparation time remains almost the same, but you end up with twice the amount of food. This is an excellent strategy for busy individuals or families, ensuring you have delicious, healthy meals ready to go when time is short.

How to Reheat Leftovers for Maximum Flavor
Reheating leftover meatloaf doesn’t have to result in a dry, uninspiring meal. In fact, with the right method, you can transform it into something even more delectable than the fresh bake! My favorite way to revive this meatloaf is to pan-fry it:
- Pan-Frying Method: Slice the cold meatloaf into ½-inch thick slices. Heat a skillet over medium heat with a small amount of your preferred cooking fat (olive oil, ghee, or avocado oil). Once hot, add the meatloaf slices and pan-fry them for a few minutes on each side until they are beautifully browned and slightly crispy. This method creates a wonderful crust and reheats the interior thoroughly without drying it out. I often find these toasty, pan-fried meatloaf slices even more appealing than those straight from the oven!
- Oven Reheating: For larger quantities or if you prefer not to pan-fry, preheat your oven to 300°F (150°C). Place meatloaf slices in an oven-safe dish, cover loosely with foil, and heat for 15-20 minutes, or until warmed through. A splash of broth can help maintain moisture.
- Microwave: While the quickest, it’s generally the least recommended as it can lead to uneven heating and a tougher texture. If using, heat in short intervals, checking frequently.
