The Ultimate King Oyster Mushroom Recipe!
This exquisite king oyster mushroom recipe, bursting with the vibrant flavors of Southeast Asia, owes its initial inspiration not to a faraway journey, but to the innovative culinary genius of our dear friend and acclaimed cookbook author, Chef Gregory Gourdet. We first encountered a variation of this dish during his tenure as the executive chef at Departure Restaurant + Lounge in Portland, Oregon. Its unique blend of heat, tang, and umami left such a lasting impression that I was compelled to reverse-engineer it for our second cookbook, Ready or Not!
While my original cookbook rendition utilized a medley of diverse mushrooms, I have since found myself consistently gravitating towards the magnificent king oyster mushrooms. Their inherently meaty texture and satisfying chewiness, combined with their remarkable ability to absorb bold seasonings, make them truly stand out. Beyond their incredible taste, these “trumpet royale” mushrooms possess an impressive visual appeal, elevating any plate to a culinary masterpiece. This specific recipe focuses on harnessing their full potential, ensuring every bite delivers an unforgettable flavor experience that’s both healthful and incredibly delicious.

What are King Oyster Mushrooms?
If you’re new to the world of King Oyster mushrooms, prepare for a delightful culinary discovery! Scientifically known as Pleurotus eryngii, this versatile fungi boasts an array of captivating aliases, including king trumpet mushroom, French horn mushroom, king brown mushroom, boletus of the steppes, trumpet royale, and aliʻi oyster. As its regal name suggests, it stands as the largest and most robust member of the esteemed oyster mushroom genus, commanding attention with its impressive size and structure.
King oyster mushrooms are easily identified by their thick, firm, and cylindrical off-white stems, elegantly crowned with relatively small, brown caps. Unlike many other mushroom varieties, the substantial stem is the star of the show and the primary edible portion, offering a truly unique texture. While their raw flavor is subtle, almost neutral, these mushrooms are culinary chameleons, readily absorbing the rich flavors of any seasoning or sauce they encounter. Their dense, meaty texture remains wonderfully firm and chewy whether sautéed, grilled, roasted, stewed, or tossed into a vibrant stir-fry.

Beyond their gastronomic appeal, king oyster mushrooms are also a nutritional powerhouse, offering a good source of protein, fiber, B vitamins, and essential minerals like potassium. Their remarkable texture and adaptability have made them a favorite among vegetarians and vegans, who frequently utilize them as a stellar plant-based substitute for premium ingredients such as abalone, scallops, and even bacon, providing a satisfying mouthfeel and robust flavor in a variety of dishes.
Where to Source Your King Oyster Mushrooms
Fortunately, this magnificent variety of mushroom has become increasingly accessible. You can typically find king oyster mushrooms at most well-stocked grocery stores and local farmers’ markets. However, for the most economical and often freshest options, your best bet is an Asian market, such as 99 Ranch Market or H Mart. These specialty stores frequently offer king oyster mushrooms at a significantly lower price point—often 25 to 50% less expensive than conventional supermarkets—even for organic varieties.
When shopping at an Asian market, you’ll usually find king oyster mushrooms pre-packaged in clear plastic bags, nestled among the other fresh fungi in the produce section. Look for mushrooms with firm, unblemished stems and caps. Avoid any that appear slimy, soft, or have dark spots, as these are signs of spoilage. I personally opt for organic mushrooms cultivated in the U.S. or South Korea, as they tend to be of excellent quality. Don’t hesitate to check the origin and freshness to ensure you’re getting the best possible product for your culinary creations.
Preparing and Storing King Oyster Mushrooms
One of the many advantages of king oyster mushrooms is their impressive shelf life. When stored correctly, they can remain fresh in your refrigerator for about 7 to 10 days. For optimal preservation, keep them in their original sealed plastic packaging. If that’s not possible, transfer them to a paper bag, which helps absorb excess moisture and prevents them from becoming slimy. Avoid storing them in the crisper drawer, as the high humidity can accelerate spoilage; a regular refrigerator shelf is ideal.
Preparing king oyster mushrooms is simple. Begin by trimming off the very bottom of each stem with a sharp knife, as this part can sometimes be tough or woody. Next, gently brush off any visible dirt with a clean brush or a damp cloth. If they’re particularly dirty, a quick, light rinse in a colander under cool water is acceptable, but avoid prolonged soaking, as mushrooms can absorb too much water. The entire remaining mushroom, from cap to stem, is edible and delicious, offering versatility in how you prepare it.
For this specific recipe, I recommend a particular cutting technique to maximize flavor absorption and achieve an appealing presentation. First, slice each king oyster mushroom in half lengthwise. Then, using a sharp paring knife, carefully cut a shallow crisscross pattern onto the cut surface. This extra step is not just for aesthetics; it significantly increases the surface area, allowing the seasoning to penetrate deeply into the mushroom flesh and ensuring more even browning during cooking. The crisscross pattern also prevents the edges from curling up in the pan, resulting in perfectly seared, “fancy-pants” mushrooms!

If you happen to have exceptionally large king oyster mushrooms, their thick stems can be sliced crosswise into elegant medallions that beautifully mimic the appearance and texture of scallops. In this scenario, you would apply the shallow crisscross pattern to both the top and bottom surfaces of each medallion to ensure thorough seasoning and even cooking.

Looking for other creative ways to use them? For instance, if you’re making my amazing crispy mushroom chips, a Japanese mandoline is an invaluable tool for achieving uniformly thin, lengthwise slices that crisp up beautifully.
Essential Ingredients for This Dish
To recreate this sensational Southeast Asian-inspired dish in your own kitchen, gather these fresh and flavorful ingredients:
- King Oyster Mushrooms: The star of our show! Refer to the notes above on selection, preparation, and various cutting methods to ensure optimal results.
- Avocado Oil: A high smoke point oil essential for searing. You can substitute with your favorite high-temperature cooking fat, such as grapeseed oil or refined coconut oil.
- Aromatics: Shallots, Minced Garlic, Fresh Ginger: These form the aromatic foundation, lending depth, warmth, and a pungent sweetness that is characteristic of Thai cuisine.
- Thai Chili Pepper (a.k.a. Bird’s Eye Chili Pepper) or Crushed Red Pepper Flakes: Provides the signature heat. I personally love the dynamic interplay of tangy, spicy, and savory flavors. If you prefer a milder dish, you can reduce the amount or omit the pepper entirely.
- Fish Sauce or Coconut Aminos + Salt (for vegans or those with shellfish allergies): Fish sauce provides a deep, savory umami and salinity. For a vegan-friendly or shellfish-free alternative, a combination of coconut aminos and a pinch of Diamond Crystal kosher salt works wonderfully to replicate a similar flavor profile.
- Lime Juice: Freshly squeezed lime juice is crucial for the tangy, bright finish that balances the richness and spice. Lemon juice or a splash of rice vinegar can also be used in a pinch for acidity.
- Fresh Thai Herbs: Cilantro, Mint, and Basil: These aromatic herbs are sprinkled on at the end, providing a burst of freshness, vibrant color, and an authentic Southeast Asian fragrance that completes the dish.
How to Cook Spicy and Tangy King Oyster Mushrooms: Step-by-Step
Follow these detailed steps to create a truly irresistible dish that brings out the best in king oyster mushrooms:
- Prepare the Mushrooms: Begin by trimming off the tough bottom ends of your king oyster mushrooms and discard them. Next, carefully cut each mushroom in half lengthwise. With a sharp paring knife, gently score a shallow diagonal crisscross pattern onto the cut surface of each mushroom half. This technique not only looks elegant but also helps the mushrooms absorb more flavor and achieve a beautiful, even browning.
- First Sauté: Heat a large skillet (cast iron works wonderfully for searing) over medium-high heat until it’s sizzling hot. Add 1 tablespoon of avocado oil and swirl to coat the pan. Carefully place half of the prepared mushrooms into the hot skillet, cut-side down, ensuring not to overcrowd the pan. Cooking in batches allows for proper browning and prevents steaming.
- Sear to Perfection: Cook the mushrooms for 2 to 4 minutes on the cut side, or until they develop a beautiful golden-brown sear. You may need to gently press down on them with a spatula to ensure even contact with the pan. Flip the mushrooms and cook for an additional 2 to 3 minutes until browned on the other side as well. Transfer these perfectly seared mushrooms to a clean platter and set aside.
- Repeat Searing (if necessary): If you have remaining mushrooms, swirl in another tablespoon of avocado oil into the empty pan and repeat the searing process for the rest of the mushrooms, following the same timing and technique.
- Sauté the Aromatics: Once all the mushrooms are cooked and removed, reduce the heat to medium. Add the final tablespoon of avocado oil to the pan. Introduce the minced shallots, garlic, ginger, and Thai chili pepper. Cook, stirring constantly, for about 1 minute, until the shallots soften and the aromatics become fragrant, filling your kitchen with an enticing aroma.
- Combine and Season: Return all the cooked mushrooms, along with any accumulated liquid on the platter, back into the pan with the sautéed aromatics.
- Finish with Flavor: Pour in the fish sauce (or coconut aminos + salt alternative) and freshly squeezed lime juice. Toss everything thoroughly to ensure the mushrooms are evenly coated with this delicious, tangy, and spicy sauce. Taste for seasoning and adjust as needed, adding a little more fish sauce for saltiness or lime juice for an extra zing.
- Garnish and Serve: Transfer the finished mushrooms to a beautiful serving platter. Generously scatter the fresh minced cilantro, mint, and Thai basil over the top. The vibrant herbs not only add visual appeal but also a burst of fresh, aromatic flavor. Serve immediately and enjoy!

Each bite promises a symphony of textures and tastes – the tender yet firm mushrooms, the fiery kick of the chili, the bright zest of lime, and the savory depth of the fish sauce, all harmonized by the refreshing herbs. It’s a culinary experience you won’t soon forget!

What Should You Serve with This Flavorful Dish?
These spicy and tangy king oyster mushrooms are incredibly versatile and pair beautifully with a variety of main courses, particularly those with Asian-inspired flavors. Here are some fantastic suggestions to complete your meal:
- Vietnamese Lemongrass Chicken: The bright, citrusy notes of lemongrass chicken perfectly complement the mushrooms.
- Asian Chicken Thighs: A savory and slightly sweet chicken dish would create a balanced plate.
- Cracklin’ Chicken: The crispy skin and juicy meat of cracklin’ chicken offer a wonderful textural contrast.
- Instant Pot Vietnamese Beef Stew (Bo Kho): For a heartier meal, the rich, aromatic stew is a comforting pairing.
- Thai Basil Chicken: This classic Thai dish shares similar flavor profiles, making them a natural match.
- Wonton Meatballs: A lighter meat option that won’t overpower the delicate mushroom flavors.
- Steamed Rice or Cauliflower Rice: For a simple, satisfying meal, serve over a bed of fluffy white or brown rice, or cauliflower rice for a low-carb option.
- A Simple Green Salad: A crisp, fresh salad with a light vinaigrette can provide a refreshing contrast to the rich flavors.
Leftover Storage Tips
Should you find yourself with any delicious leftovers (which is unlikely!), they store exceptionally well. Allow the cooked king oyster mushrooms to cool completely to room temperature before transferring them to an airtight container. They can be stored in the refrigerator for up to four days, retaining much of their flavor and texture. For longer storage, you can freeze them for up to 3 months. To reheat, gently warm them in a skillet over medium heat, or in the microwave, until heated through, adding a splash of water or broth if they seem a little dry.
