Ingredients (Serves 2)

Quality ingredients are the foundation of any great dish, and this recipe is no exception. Here’s what you’ll need to create this delectable shrimp sensation, along with some insights into why each component plays a crucial role:

  • 1 pound large frozen shrimp (21-25 per pound): Opt for large shrimp for a more substantial bite and easier handling. Frozen shrimp are often flash-frozen at their peak freshness, making them a convenient and high-quality option. Look for wild-caught varieties if possible.
  • 1 tablespoon Tabil seasoning: This unique Tunisian spice blend is the heart of the dish. If you can’t find it pre-made, you can create a simplified version by combining equal parts ground coriander, caraway seeds (or ground caraway), garlic powder, and a pinch of cayenne pepper or paprika.
  • ½ teaspoon kosher salt: Essential for enhancing the natural sweetness of the shrimp and balancing the flavors of the Tabil. Adjust to your personal preference.
  • 2 tablespoons macadamia nut oil (or coconut oil), divided: Macadamia nut oil has a high smoke point and a delicate, buttery flavor that complements seafood beautifully. Coconut oil is an excellent alternative, offering a slightly richer taste and is also a Paleo-friendly fat. Using divided portions ensures optimal searing and flavoring.
  • 1 pint cherry tomatoes: These small, sweet bursts of flavor add a wonderful acidity and freshness to the dish. They soften slightly when warmed, releasing their juices and creating a light sauce.
  • Handful fresh basil leaves (optional, but highly recommended): Fresh basil introduces a fragrant, peppery note that brightens the entire dish and adds a pop of vibrant color. Don’t skip it if you want to truly elevate the flavor.

Method: Crafting Your Flavorful Shrimp in Minutes

Preparing this dish is wonderfully straightforward, designed to get you from prep to plate with minimal fuss. Follow these steps for perfectly cooked, exquisitely flavored shrimp:

  1. Defrost the Shrimp: Begin by transferring your frozen shrimp into a colander. Place the colander in the sink and run cold water over the shrimp for approximately 5 minutes. The cold water method ensures a gentle and even thaw, preserving the shrimp’s texture. You’ll know they’re ready when they are fully pliable and no longer icy. Avoid using hot water, as it can partially cook the shrimp and compromise their texture.
  2. Prepare the Shrimp: Once defrosted, it’s time for peeling and deveining. Grasp the shrimp firmly and peel away the shell, starting from the head end and working towards the tail. You can leave the tail on for presentation, or remove it for easier eating. To devein, make a shallow cut along the back curve of each shrimp. You’ll usually find a thin, dark “intestine” running along this line. Gently pull it out with the tip of your knife or a toothpick. While not harmful, removing the vein improves both the appearance and texture of the cooked shrimp. Rinse them briefly after peeling and deveining, then pat them thoroughly dry with paper towels. Excess moisture can prevent a good sear.
  3. Season the Shrimp: In a medium bowl, combine the drained and dried shrimp with the Tabil seasoning, kosher salt, and one tablespoon of macadamia nut oil (or coconut oil). Toss everything together thoroughly, ensuring each shrimp is evenly coated with the vibrant spice blend. This step allows the flavors to meld and adhere to the shrimp before cooking.
  4. Heat the Skillet: Place a large skillet, preferably cast iron or stainless steel, over medium-high heat. Add the remaining tablespoon of macadamia nut oil (or coconut oil) to the pan. Allow the oil to heat until it shimmers and just begins to smoke lightly. A hot pan is crucial for achieving a beautiful sear on the shrimp.
  5. Sear the Shrimp: Carefully add the seasoned shrimp to the hot skillet in two separate batches. It is essential not to overcrowd the pan, as this can lower the pan’s temperature, causing the shrimp to steam rather than sear, resulting in a rubbery texture. Arrange the shrimp in a single layer, giving each piece enough space. Sear for approximately 1 minute on each side, until they turn opaque and pink with a slight curl. Overcooking shrimp will make them tough, so watch them closely!
  6. Warm the Tomatoes: Once all the shrimp are perfectly seared, remove them from the pan and transfer them to a serving platter. Immediately toss the cherry tomatoes into the empty skillet. The residual heat and flavorful oil in the pan are perfect for warming them. Roll the tomatoes around in the pan for 2-3 minutes, until they are warmed through and just beginning to soften slightly. They should release some of their sweet juices. Add the warmed tomatoes to the platter with the shrimp.
  7. Finish with Fresh Basil: For the basil, employ the chiffonade technique: stack several leaves, roll them tightly like a cigar, and then slice thinly across the roll to create delicate ribbons. Sprinkle these fresh basil ribbons generously over the sautéed shrimp and tomatoes. The fresh basil not only adds a burst of herbal aroma and flavor but also a beautiful contrasting color.

Serve immediately and marvel at how such a simple dish can be so incredibly satisfying!

Serving Suggestions for a Complete Meal

This Tabil Seasoned Sautéed Shrimp is incredibly versatile and pairs well with a variety of sides to create a well-rounded and delicious meal. For a low-carb or Paleo-friendly option, consider serving it alongside cauliflower rice, zucchini noodles, or a fresh, crisp green salad with a light vinaigrette. If you’re not strictly Paleo, quinoa or a simple side of fluffy white rice would perfectly soak up any remaining pan juices. Steamed or roasted vegetables like asparagus, broccoli, or green beans also make excellent accompaniments, adding more fiber and nutrients to your plate. A squeeze of fresh lemon juice over the finished dish can further brighten the flavors and add a zesty finish.

Tips for Success & Variations

Mastering this simple recipe is easy, but a few tips can ensure perfection every time. Always remember not to overcook the shrimp; they cook very quickly and can become rubbery if left on the heat for too long. For added convenience, you can defrost, peel, and devein the shrimp ahead of time, storing them in the refrigerator for up to 24 hours. This significantly reduces prep time just before cooking.

Feel free to experiment with variations to suit your taste. If Tabil seasoning is hard to find, a good quality curry powder or a blend of cumin, coriander, and a pinch of cayenne can offer a similar aromatic profile. For extra vegetables, consider quickly sautéing some thinly sliced bell peppers or spinach in the pan after the tomatoes are warmed, just until wilted. A splash of white wine or chicken broth added to the pan after the shrimp are removed can deglaze it, creating a flavorful sauce to drizzle over the dish. A final garnish of chopped fresh cilantro or a sprinkle of red pepper flakes can also add another layer of flavor and visual appeal.
