The Ultimate Chocolate Pie: Paleo, Vegan, & Gluten-Free!
As a devoted chocoholic, I firmly believe that life is simply better with a generous dose of dark chocolate. Whether it’s a small square to curb a sweet craving or a magnificent dessert for a special occasion, chocolate always hits the spot. While I usually advocate for balance, there are those moments when only a truly phenomenal, grain-free dessert will do. And for me, that dessert absolutely has to be chocolate-based. It might sound redundant, but you understand the obsession!
This particular recipe for Paleo Chocolate Pie with a Raw Graham Cracker Crust is a revelation. It’s a magnificent creation that effortlessly caters to various dietary needs without compromising on flavor or texture. Imagine a rich, creamy chocolate filling nestled in a nutty, naturally sweet crust – it’s a dream come true for anyone looking for a healthier yet deeply satisfying dessert option.

The Inspiration: Kelly Brozyna’s Culinary Genius
I count my lucky stars for culinary talents like Kelly Brozyna. She’s not just a super-mom and a celebrated blogger, but also the author of several incredible cookbooks. Kelly embarked on her journey into gluten-, dairy-, and refined-sugar-free eating almost a decade ago to address significant health challenges within her family. This commitment deepened when she transitioned her family to a completely grain-free diet, observing their health transform from good to absolutely remarkable.
I’ve been a long-time admirer of Kelly’s work, particularly her innovative recipes for dairy-free frozen treats. What truly distinguishes Kelly, however, is her unwavering dedication to placing family and joy at the forefront of everything she does. It’s inspiring to see her blend healthy living with genuine fun, a philosophy beautifully reflected in her delicious and accessible recipes.

Kelly’s groundbreaking book, The Paleo Chocolate Lovers’ Cookbook, is an absolute treasure. It’s brimming with inventive and visually stunning chocolate recipes, making it the ultimate guide for real food enthusiasts who share my unwavering passion for cacao. Kelly’s years of perfecting her craft shine through, introducing me to exciting new ingredients like liquid stevia, hemp milk, walnut flour, and chia meal – all of which I’m eager to experiment with, especially as the holiday baking season approaches!

Why This Pie Is a Game-Changer
Although I was keen to dive into Kelly’s cookbook immediately, I didn’t have all the specialty ingredients on hand. So, I scanned for a recipe that could be whipped up using staples already in my pantry. That’s how I discovered this phenomenal Paleo Chocolate Pie with a Raw Graham Cracker Crust. What immediately caught my eye was its sheer simplicity. A bit of chopping, melting, and blending – that’s it!

Admittedly, I harbored a tiny bit of skepticism about how a dessert made solely from walnuts, Medjool dates, cinnamon, coconut cream, coconut oil, dark chocolate, vanilla, and salt would truly taste. No honey, maple syrup, or coconut sugar? Could it really be sweet and satisfying? My doubts vanished the moment I dipped a finger into the pie filling. Wowza! The flavor was incredibly rich, deeply chocolatey, and perfectly balanced.
I quickly summoned my boys (and their friend on a playdate) for a taste test. They went absolutely wild for it, even Big-O, who typically isn’t a fan of coconut or dates. I conveniently omitted the ingredient list, but I’m certain their enthusiastic rave would have been the same after experiencing the sheer deliciousness of that filling. This pie proves that wholesome ingredients can create truly luxurious and unforgettable desserts.

In fact, I was able to whip up two mini pies in no time at all, and the results were nothing short of deliciously decadent. Each bite was like savoring a rich chocolate truffle, beautifully encased in a nutty, wholesome graham cracker-style crust. For those who are comfortable with microwave use (like myself!), this recipe becomes even simpler, as you can melt the chocolate, coconut oil, and coconut cream in mere moments. The efficiency means less time in the kitchen and more time enjoying this amazing treat!
After sharing a picture of my finished Chocolate Pie on social media, I was inundated with requests for the recipe. Since it’s Kelly’s brilliant creation, I first sought her permission to share it. Luckily for all of you, she graciously said yes! You’re welcome—prepare to fall in love with this pie!
Key Ingredients for Your Decadent Pie
Creating this exquisite chocolate pie requires a few simple, wholesome ingredients. The magic lies in their quality and how they come together to form both a sturdy, flavorful crust and a rich, creamy filling.

Crust Essentials
- Walnut halves and pieces: These form the base of our “graham cracker” crust, providing a rich, nutty flavor and a sturdy texture.
- Soft, pitted Medjool dates: The natural sweetness and stickiness of Medjool dates act as both a binder and a natural sweetener for the crust, eliminating the need for refined sugars.
- Ground cinnamon: A touch of cinnamon adds a warm, aromatic depth that complements the walnuts and dates beautifully.
- Pinch of sea salt: Enhances all the flavors, balancing the sweetness and bringing out the nuances of the nuts and dates.
Velvety Filling Components
- Coconut cream*: This is the secret to the pie’s luxurious, silky texture. It provides the necessary fat and creaminess without any dairy.
- Soft, pitted Medjool dates: Again, dates contribute natural sweetness and a smooth consistency to the filling, ensuring a rich, fudgy bite.
- Dark chocolate, melted: The star of the show! I typically use 70% to 85% cacao dark chocolate bars, such as Green & Black Organic Dark Chocolate or Alter Eco brands. For convenience, Hu Gems or Guittard Sante Chocolate Chips are excellent ready-to-melt options.
- Melted coconut oil: Helps the pie set firmly in the refrigerator and adds to the smooth, melt-in-your-mouth texture.
- Vanilla extract: A classic flavor enhancer that brightens and deepens the chocolate notes.
*For the filling, always opt for unsweetened canned coconut cream. Alternatively, you can use the thick cream that separates and rises to the top of a can of full-fat coconut milk after it’s been refrigerated overnight. This chilling process ensures you get the richest, thickest cream for your pie.
Crafting Your Raw Vegan Chocolate Pie: Step-by-Step
Making this raw, vegan chocolate pie is surprisingly straightforward, requiring minimal cooking and a simple process that anyone can follow. Get ready to create a masterpiece with just a few easy steps!
For the Crust:
- To begin, gather your crust ingredients. In a food processor fitted with an “S” blade, combine the walnuts, Medjool dates, ground cinnamon, and a pinch of sea salt. Pulse and purée these ingredients for approximately 20 seconds, or until the mixture is very fine and begins to clump together.
- The mixture should resemble a fine, slightly sticky meal, as shown here:
- Next, transfer this prepared crust mixture into a glass pie dish. Using your fingers or the back of a spoon, firmly press the mixture across the bottom and halfway up the sides of the dish to form an even crust. (As a fun alternative, I divided my mixture into two 4.5 inch mini spring-form pans for individual servings.)

For the Velvety Filling:
- Rinse out the food processor bowl – you’ll need it again for the filling.
- In a small saucepan, gently heat the coconut cream until it’s just slightly warm. (For a quick shortcut, I often microwave it in a glass measuring cup for about 45 seconds until warm and fluid.)
- Add the slightly warmed coconut cream, the remaining Medjool dates, melted dark chocolate, melted coconut oil, and vanilla extract into the clean food processor. Purée for about 1 minute, or until the filling is uniformly dark, glossy, and completely smooth with no date chunks remaining.
- Carefully pour the luscious chocolate filling over the prepared crust. Ensure it spreads evenly to create a smooth top.
- Once poured, transfer the pie(s) to the refrigerator and chill for at least 3-4 hours, or until completely set. This chilling time is crucial for the pie to firm up and achieve its perfect consistency.
- When you’re ready to serve this delightful pie, enhance its elegance and flavor by topping each slice with a generous dollop of whipped coconut cream. This adds a lovely contrast in texture and a subtle, complementary flavor.

Your whole family, and any guests, will absolutely adore this unbelievably delicious and surprisingly healthy chocolate pie!

Storage Tips for Leftovers
Should you miraculously have any pie left over (a rare occurrence, I assure you!), store it in an airtight container in the refrigerator. It will keep beautifully for up to 4 days. The flavors tend to meld even more wonderfully after a day or two, making it an excellent make-ahead dessert. Just remember to bring it out of the fridge for about 10-15 minutes before serving to allow the flavors to soften slightly.
