The inspiration for these beloved Nomster Burgers comes from a deeply personal place. This recipe was first featured in the “Not Ready! Emergency Fast Food That Tastes Good” section of our popular cookbook, Ready or Not! My husband, Henry, had a particular fondness for In-N-Out’s Animal Style burgers during his college road trips. This classic secret menu item is celebrated for its distinctive preparation: patties grilled with mustard, layered with extra sauce, and topped with savory grilled onions. My goal was to capture that beloved flavor profile while transforming it into a meal that aligns with a healthy, Whole30 and Paleo lifestyle.

Our Nomster Burgers pay homage to Henry’s favorite by featuring a perfectly mustard-fried patty, but with a unique twist: we’ve delicately stuffed the patties with tender, caramelized shallots. To elevate the experience, we top them with a vibrant, spicy Whole30 Sriracha and a perfectly crispy fried egg. Serving these “protein-style” – nestled in crisp lettuce leaves instead of a traditional bun – ensures they are completely gluten-free and compliant with both Whole30 and Paleo dietary guidelines. The result is an incredibly satisfying and flavorful burger that will have everyone smiling, proving that healthy eating can be both easy and incredibly delicious.

Expert Cooking Tips, Clever Substitutions, and Serving Suggestions for Your Nomster Burgers

Selecting the Perfect Meat for Flavorful Burgers

Choosing the right ground meat is crucial for a juicy, flavorful burger. For these Nomster Burgers, I highly recommend using ground beef with a fat content of 15-20%. This specific fat ratio is key because the fat renders during cooking, basting the patty from within and preventing it from drying out. It also carries much of the flavor, making your burgers incredibly rich and satisfying. While grass-fed beef is often preferred for its nutritional benefits and flavor profile, any quality ground beef within this fat range will yield excellent results.

If you’re looking to explore alternatives or prefer a different protein, you absolutely can! Ground lamb offers a distinct, rich flavor that pairs beautifully with the mustard and shallots. Ground turkey or bison are also viable options, provided you choose a grind that isn’t overly lean. Super lean meats tend to produce drier, less flavorful burgers. If you opt for a leaner meat, consider adding a tablespoon of rendered bacon fat or ghee to the mixture to ensure your patties remain moist and delicious.

The Secret to Succulent Shallots: Temperature Matters!

One of the unique elements of our Nomster Burgers is the shallot-stuffed patty, and the temperature of these cooked shallots is more important than you might think! It’s essential that your sautéed shallots are at room temperature, or even colder, before you incorporate them into the ground meat. If the shallots are warm, they will cause the fat in the ground meat to soften and warm up, making the patties incredibly difficult to form and handle. The mixture will become sticky and lose its structural integrity, leading to frustration.

To avoid this common pitfall, I often prepare the shallots ahead of time. Simply sauté them until golden and translucent, then transfer them to a bowl and let them cool completely. For those busy weeknights when time is of the essence, a quick chill method works wonders: spread the cooked shallots in a single, thin layer on a plate and pop it into the freezer or refrigerator for a few minutes until they are thoroughly cooled. No shallots on hand? A finely diced half of a small red, yellow, or white onion will work just as well, providing a similar aromatic base. And for those who simply dislike onions, rest assured, you can omit them entirely; your Nomster burgers will still be incredibly flavorful!

Mastering the Pan-Fry: Achieving the Perfect Burger Crust

Preparing your burger patties in advance can be a fantastic time-saver. You can form the shallot-stuffed patties up to a day ahead and store them in the refrigerator, ready for when hunger strikes. However, there’s one critical rule to remember: do not salt your patties until you are moments away from frying them. Salting ground meat too early draws out moisture, resulting in a drier, tougher burger. For an in-depth understanding of this culinary principle, a great article from Serious Eats provides excellent scientific explanations why salting just before frying yields the best results.

When it comes to forming, I like to flatten the burgers to about a half-inch thickness. This ensures quicker, more even cooking and helps achieve that desirable crust without overcooking the interior. My absolute favorite pan for frying burgers is a well-seasoned cast iron skillet. Cast iron excels at retaining and distributing heat evenly, which is essential for developing a beautiful, deep brown crust (the Maillard reaction) that locks in flavor and moisture. If you don’t have cast iron, a heavy-bottomed stainless steel pan can also work, but keep an eye on the heat distribution.

Navigating the World of Whole30-Friendly Mustard

Finding Whole30-compliant mustard has become significantly easier in recent years, as more brands are catering to health-conscious consumers. The key to successful Whole30 ingredient sourcing is always to read the label carefully. You’ll want to avoid mustards that contain added sugars (including honey, agave, or even fruit juice concentrates), wine, malt, sulfites, or any other non-compliant additives. Many organic brands, whether you prefer the classic American yellow mustard style or a robust Dijon, are often good candidates.

Some of my personal favorite brands that consistently offer Whole30-compliant options include Primal Kitchen, Organicville, and Annie’s Homegrown Organic. These brands typically prioritize clean ingredients, making them reliable choices. However, feel free to use any Whole30-approved mustard variety that appeals to your palate. And remember, if mustard isn’t your thing, you can certainly leave it off – the Nomster Burgers are delicious even without it!

Perfect Pairings: What to Serve with Your Nomster Burgers

These versatile Nomster Burgers are excellent on their own, but they truly shine when paired with complementary side dishes. To create a balanced and satisfying meal, I love serving them alongside a generous big green salad dressed with a simple vinaigrette. The crisp freshness of the greens provides a wonderful contrast to the rich burger patty.

For something heartier, roasted vegetables are always a fantastic choice. Think about vibrant Whole Roasted Cauliflower, which becomes tender and slightly caramelized, or a medley of broccoli and carrots. If you’re craving that classic burger and fries combination, our oven-baked sweet potato fries are a perfect Whole30-friendly substitute – sweet, crispy, and incredibly addictive. Another crowd-pleaser are the Instant Pot Crispy Potatoes; just a friendly reminder that if these are a “food without brakes” for you, it might be best to save them for after your Whole30 reset!

Other excellent Whole30-compliant side options include a creamy avocado salad, a quick coleslaw made with compliant mayonnaise, or even simple sautéed greens like spinach or kale. The goal is to build a meal that is both nutritious and incredibly enjoyable, allowing you to fully savor the Nomster Burger experience.

Recipe Details

  • Yields: 4 servings
  • Prep Time: 10 minutes
  • Cook Time: 20 minutes
  • Total Time: 30 minutes
  • Author: Michelle Tam

Ingredients:

  • 3 tablespoons ghee, avocado oil, or fat of choice, divided
  • 1 large shallot or ½ small red onion, finely diced
  • 1 pound ground beef, 15% fat or higher
  • Diamond Crystal kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 4 teaspoons Dijon-style mustard (or your favorite Whole30-compliant mustard variety)
  • 1 head butter lettuce, separated into leaves
  • 2 medium tomatoes, sliced
  • 4 large eggs, cooked to a crispy fried sunny-side-up style (optional – follow these instructions for best results)
  • Whole30 Sriracha or Whole30 ketchup (optional, for serving)

Equipment:

  • Large cast iron skillet (essential for the perfect sear)
  • Heat-resistant silicone spatula
  • Large and small mixing bowls
  • Measuring spoons
  • Cutting board
  • Chef’s knife
  • Fish spatula or wide turner (for easy flipping)

Method:

  1. Begin by heating a large skillet over medium-low heat. Once the pan is hot, add 1 tablespoon of your chosen fat (ghee or avocado oil) and swirl to coat the bottom. Toss in the finely diced shallots and sauté them gently for 3 to 5 minutes, stirring occasionally, until they become beautifully golden brown and translucent.
  2. Overhead shot of finely diced shallots sautéing in a cast iron skillet, turning golden and aromatic.

  3. Transfer the sautéed shallots from the skillet to a separate bowl and allow them to cool completely to room temperature. For an expedited cooling process, spread the cooked shallots in a thin, single layer on a plate and place it in the refrigerator or freezer for a few minutes until they are thoroughly chilled. This step is crucial for easy patty formation.
  4. A hand holding a shallow bowl filled with perfectly caramelized diced shallots, cooled and ready for the next step.

  5. Divide the pound of ground beef into 4 equal portions. With clean hands, gently sculpt each portion into a concave, bowl-like shape. This indentation will be where the shallots are tucked.
  6. A hand holding a portion of raw ground beef, carefully formed into a bowl shape to prepare for stuffing.

  7. Carefully tuck about a teaspoon of the cooled and chilled shallots into the center of each beef bowl. Once the shallots are in place, gently seal up the edges of the beef around them, forming a compact ball. Ensure the shallots are fully enclosed within the patty.
  8. A teaspoon of cooked shallots is carefully added to a beef "bowl" before sealing.

  9. With your hands, gently flatten each shallot-stuffed beef ball into a ½-inch thick burger patty. Aim for an even thickness to ensure consistent cooking. (Make Ahead Tip: At this stage, you can cover and refrigerate these formed patties for up to one day before cooking.)
  10. Two hands are carefully sealing up the ground beef around the cooked shallots to form a perfectly shaped ball.

Two hands gently patting a Nomster burger flat, creating a uniform, shallot-stuffed patty ready for frying.

  11. When you are ready to cook, heat the large skillet over medium-high heat. Just before placing them in the pan, liberally season one side of the Nomster patties with Diamond Crystal kosher salt and freshly ground black pepper.
  12. A hand is sprinkling kosher salt generously on four Nomster Burgers, preparing them for the skillet.

  13. Once the skillet is hot, swirl in the remaining 1 tablespoon of ghee or avocado oil. Carefully place two seasoned patties, seasoned-side down, into the hot pan. Immediately sprinkle the unseasoned top side of the patties with salt and pepper. Fry undisturbed for approximately 3 minutes, or until a beautiful, deeply browned crust has formed on the bottom.
  14. A hand is carefully placing a seasoned Nomster Burger into a sizzling hot cast iron skillet.

  15. Using a spoon, spread about a teaspoon of your chosen mustard evenly over the top of each Nomster Burger patty. Then, using your fish spatula, carefully flip the patties over onto the mustard-coated side. Continue to cook for another 2 minutes, or until your desired level of doneness is reached. The mustard will caramelize onto the patty, creating that signature Animal Style flavor. Remove the cooked burgers and repeat these frying steps for the remaining two patties.

  17. Serve each mouthwatering Nomster Burger patty “protein-style” on a bed of crisp butter lettuce, accompanied by fresh tomato slices. For the ultimate “Nomstrous” experience, crown your burger with a perfectly crispy fried egg and a generous squirt of Whole30 Sriracha or ketchup!
