From Stovetop Classic to Instant Pot Sensation: The Evolution of Our Cowboy Chili
The original Cowboy Chili recipe has long been a beloved staple for Nomster fans, first introduced in our acclaimed cookbook, Nom Nom Paleo: Food For Humans. It’s celebrated for its comforting, no-bean structure, featuring succulent chunks of beef enveloped in a wonderfully smoky, almost mole-like sauce, enhanced with the irresistible crunch of bacon. The only common feedback? The traditional stovetop method required a significant time commitment, often simmering for four hours to achieve that perfect fork-tender consistency and rich flavor.
Recognizing the need for a faster, equally delicious alternative, we embarked on a mission to adapt this classic for the modern kitchen appliance: the Instant Pot. After extensive testing and meticulous adjustments, we successfully developed a variation that slashes cooking time by two-thirds without sacrificing any of the deep, complex flavors our readers love. This Instant Pot version ensures you can enjoy your favorite hearty chili in a fraction of the time, making it ideal for weeknight dinners or when you need a comforting meal without the long wait.
Choosing the Perfect Cut: What Meat Works Best for Cowboy Chili?
For this Instant Pot Cowboy Chili, the star of the show is undoubtedly the beef chuck roast. This cut is a fantastic choice because it’s not only budget-friendly but also transforms into incredibly tender, melt-in-your-mouth pieces under pressure. Its marbling provides rich flavor and moisture, making it resilient to both quick pressure cooking and long, slow braising methods. If chuck roast isn’t available or you’re looking for alternatives, boneless beef short ribs and brisket are excellent substitutes, offering similar rich flavor and texture. Ensure they are cut into uniform 2-inch cubes for even cooking.
Not a fan of beef? You can easily substitute cubed pork shoulder, maintaining the same cooking time and ingredient ratios. For those seeking even quicker and more economical options, ground beef, pork, or dark meat turkey can be used with great success. When using ground meat, remember to brown it thoroughly before proceeding with the recipe steps. You’ll also need to adjust the pressure cooking time significantly, reducing it to just 15 minutes under high pressure. The Secret’s in the Spice: Ancho Chile Powder vs. Generic Chili Powder
The distinctive, deep flavor of our Cowboy Chili largely comes from ancho chile powder, and understanding its unique characteristics is key to achieving the desired taste profile. Ancho chile powder is crafted from dried poblano peppers, known for their earthy, smoky, slightly sweet, and mildly spicy notes. This individual spice is a cornerstone in authentic Mexican cuisine, contributing a complexity that generic chili powder often lacks.
Generic chili powder, on the other hand, is typically a blend of various chile peppers, cumin, oregano, garlic powder, and sometimes salt. The specific ratios and ingredients can vary widely between brands, leading to inconsistent flavors. While you *can* substitute generic chili powder for ancho, be prepared for a difference in the final dish’s depth and smokiness. If you opt for a salt-free chili powder that you particularly enjoy, feel free to use it, but you may find the chili needs a flavor boost. After cooking, taste and consider enhancing the heat with a pinch of cayenne pepper or adding a dash of liquid smoke for that missing smoky essence.
No Instant Pot? No Problem! Slow Cooker and Crockpot Instructions
Don’t have an Instant Pot yet, or prefer the low-and-slow approach? You can absolutely adapt this Cowboy Chili recipe for your slow cooker or Crockpot! Begin by performing steps 2 through 6 (browning bacon, sautéing onions and tomato paste, mixing spices, broth, and chocolate, then adding garlic) in a large, heavy-bottomed pot or Dutch oven on your stovetop. Once these initial steps are complete, transfer all the sautéed ingredients, along with the salted beef, cooked bacon, and lime juice, into your slow cooker. Cover and cook on the LOW setting for 8 to 10 hours, or on HIGH for 4 to 6 hours, until the beef is incredibly tender and easily shreddable. This method will still yield a delicious, deeply flavorful chili with minimal fuss.

Step-by-Step Guide: How to Make Instant Pot Cowboy Chili
Creating this Instant Pot Cowboy Chili is a straightforward process that yields incredible results. Follow these steps for a perfect batch every time:
Step 1: Season the Beef. In a large bowl, generously toss the cubed beef chuck roast with kosher salt. Ensure each piece is evenly coated, then set it aside to allow the salt to penetrate the meat, enhancing its flavor and tenderness.

Step 2: Cook the Bacon. Activate the sauté function on your Instant Pot. Once the metal insert is hot and shimmering, add the sliced bacon. Cook, stirring occasionally, until the bacon bits are perfectly crispy and golden brown. This step renders out fat and infuses the pot with smoky flavor.

Step 3: Remove Bacon. Using a slotted spoon, carefully transfer the crispy bacon bits to a platter lined with paper towels. This will help absorb excess grease and keep the bacon delightfully crunchy for garnish or later addition. Leave the rendered bacon fat in the pot.

Step 4: Sauté Aromatics. Add the diced onion and tomato paste directly into the Instant Pot with the bacon fat. Sauté for about 2-3 minutes, stirring frequently, until the onions soften and become translucent, and the tomato paste deepens in color, releasing its rich flavor.

Step 5: Prepare Spice Mixture. While the onions are sautéing, combine the ancho chile powder, ground cumin, dried oregano, smoked paprika, and the bone or chicken broth in a small bowl or measuring cup. Whisk thoroughly until the mixture is smooth and lump-free.

Step 6: Incorporate Chocolate. Stir the shaved unsweetened chocolate into the spice and broth mixture until it’s fully combined. The chocolate will melt and integrate into the sauce, providing a subtle but crucial depth of flavor to the chili.

Step 7: Build the Chili Base. Once the onions are softened, add the minced garlic to the Instant Pot and cook for about 30 seconds until fragrant. Then, pour in the prepared chili-chocolate mixture. Stir well to combine all ingredients, allowing the spices to bloom in the heat for another minute.

Step 8: Add Main Ingredients. Add the salted beef cubes back into the pot, along with the cooked bacon bits (reserving some for garnish if desired), and the fresh lime juice. Stir all the components thoroughly to ensure the beef is fully coated in the rich chili base. This prepares everything for pressure cooking.

Step 9: Pressure Cook. Cancel the sauté function. Secure the lid on your Instant Pot, making sure the sealing ring is properly in place. Set the vent to the “Sealing” position. Program your Instant Pot to cook under high pressure for 35 minutes. This duration ensures the chuck roast becomes incredibly tender.

Step 10: Release Pressure. Once the cooking cycle is complete, allow the pressure to release naturally. This typically takes about 15-20 minutes and helps tenderize the meat further. If you’re short on time, wait at least 15 minutes for a partial natural release before carefully performing a manual quick release of any remaining pressure.

Step 11: Season and Serve. Open the lid, carefully avoiding the steam. Taste the chili and adjust the seasoning with additional salt and freshly ground black pepper as needed. Ladle the hot chili into bowls and top with your favorite garnishes such as diced white onions, fresh cilantro, julienned radishes, a squeeze of lime juice, or a dollop of full-fat coconut yogurt for creaminess. Enjoy this hearty and flavorful meal!

What to Serve with Your Hearty Beef Chili
This rich and robust Instant Pot Cowboy Chili is a meal in itself, but it truly shines when paired with complementary sides. To balance the richness of the beef, we recommend serving it with one or two fresh, vibrant vegetable dishes. A crisp, large green salad with a zesty vinaigrette makes a fantastic accompaniment. Other excellent choices include our savory roasted broccoli and bacon, crunchy fried green plantains, or a quick simple cauliflower fried rice. For a heartier meal, ladle the chili generously over cooked spaghetti squash or a fluffy baked sweet potato. Don’t forget the garnishes! Beyond the suggested white onions, cilantro, and radishes, feel free to get creative. (And yes, we promise not to tell if you secretly top yours with shredded cheddar cheese or a dollop of sour cream – traditional chili toppings are always a treat!)
Storing and Freezing Leftover Cowboy Chili
One of the best things about making a big batch of chili is the delicious leftovers! This Instant Pot Cowboy Chili stores beautifully. To keep it fresh, transfer any cooled leftover chili into an airtight container and refrigerate for up to 4 days. For longer storage, this chili freezes exceptionally well. Portion it into freezer-safe containers or bags and freeze for up to 3 months. When you’re ready to enjoy it again, simply thaw overnight in the refrigerator and reheat gently on the stovetop or in the microwave until warmed through. The flavors often deepen and meld even more after a day or two, making it an excellent meal prep option.
Creative Leftover Makeovers: Beyond the Bowl
Don’t let leftover chili go to waste – it’s a versatile base for countless delicious “makeovers”! Repurpose your Instant Pot Cowboy Chili into exciting new meals. Use it as a savory filling for southwestern omelets or scramble it with eggs for a hearty breakfast. It’s also fantastic for stuffing into paleo meat pies or creating quick lettuce-wrapped tacos. For a lighter, yet equally satisfying option, dilute the leftover chili with equal parts bone broth to transform it into a robust, warming soup. Stir in a handful of fresh baby spinach at the end to wilt for an extra boost of greens and nutrients. The possibilities are truly endless, limited only by your imagination!
