The Story Behind This “Cheater” Stew
This beloved “Cheater Pork Stew” has a rather unconventional origin story. Years ago, during my demanding night shifts as a hospital pharmacist – a time I affectionately refer to as my “zombie drug dealer” phase – I stumbled upon a truly brilliant and incredibly simple slow cooker recipe. It was a happy accident, born from the necessity of quickly preparing nourishing meals between grueling hours. I haphazardly combined some deeply savory, umami-packed ingredients, cubed pork shoulder, and a medley of vegetables into a trusty Crock-Pot, and the rest, as they say, is history.
This recipe quickly became an original Nom Nom Paleo classic, cherished by many for its ease and deliciousness. However, once I discovered the revolutionary efficiency of the Instant Pot, my slow cooker began gathering dust. The allure of preparing tender, flavorful stew in a fraction of the time was simply too strong to resist. Prompted by countless requests from fellow Nomsters, I finally perfected and meticulously documented the Instant Pot adaptation. Now, you too can effortlessly create this heartwarming stew, enjoying all the flavor with even greater convenience!

Why the Instant Pot Version Shines
While the slow cooker version remains a classic, the Instant Pot brings this “cheater” stew to a whole new level of convenience and speed. The primary advantage lies in the high-pressure cooking environment, which drastically reduces the cooking time from several hours to mere minutes. This means you can achieve fall-apart tender pork and perfectly cooked vegetables in a fraction of the time, making it an ideal choice for busy weeknights when you need a wholesome meal on the table fast.
Beyond speed, the Instant Pot offers the same “set it and forget it” convenience as a slow cooker. You can start the stew, leave it to do its magic, and return home to a warm, ready-to-eat dinner. This frees up your time for other activities, eliminating the stress of last-minute meal preparation. We’ve also enhanced the seasoning in this Instant Pot rendition, incorporating our indispensable Magic Mushroom Powder. This secret weapon infuses the stew with an incredible depth of umami flavor that truly elevates the dish, making it even more irresistible. If you don’t own an Instant Pot, don’t fret! You can still enjoy this fantastic meal by following the original slow cooker recipe.
The Magic of No Extra Liquid
One of the most surprising and convenient aspects of this Instant Pot Pork and Cabbage Stew is that you do NOT need to add any extra liquid, such as chicken broth, water, or even red wine, beyond what the ingredients themselves provide. This is a common point of confusion for new pressure cooker users, but trust us, it works!
The beauty of this recipe lies in the natural release of moisture from the key ingredients: the pork shoulder, the onions, and especially the marinara sauce. As the Instant Pot comes up to pressure, these components will collectively yield ample liquid to create a rich, flavorful broth, ensuring the stew cooks perfectly without any risk of burning (as long as you layer the ingredients correctly, which we’ll cover in the instructions). This clever trick simplifies the ingredient list and streamlines the cooking process even further, truly living up to its “cheater” moniker.
Essential Ingredients for the Perfect Pork Stew
Crafting a truly exceptional Instant Pot Pork and Cabbage Stew begins with selecting the right ingredients. Each component plays a vital role in building the robust flavors and tender texture that make this dish so special.
- Pork Shoulder or Pork Butt: This is non-negotiable for success. These cuts are rich in collagen and fat, which break down beautifully under pressure, resulting in incredibly tender, melt-in-your-mouth pork. Boneless country ribs are also an excellent substitute. Please steer clear of lean cuts like pork tenderloin, pork loin, or pork chops, as they will dry out and become tough in this stew. Avoid generic “pork stew meat” as it can often be an inconsistent mixture of subpar cuts.
- Extra Virgin Olive Oil, Avocado Oil, or Ghee: Choose a high-quality cooking fat that complements the flavors of the stew. Any of these options work wonderfully and are Whole30 and Paleo approved.
- Yellow Onion: A large yellow onion provides a sweet, aromatic base that caramelizes slightly during the sauté process, adding depth to the stew.
- Garlic: Fresh garlic is key for its pungent, savory notes. Don’t be shy; six cloves provide a fantastic flavor punch. Make sure to smash and peel them for easier prep.
- Magic Mushroom Powder: This unique seasoning blend is our secret weapon, adding an incredible layer of umami that makes the stew taste profoundly savory and complex. If you don’t have it, a good quality kosher salt can be used, but the mushroom powder truly enhances the flavor profile.
- Red Boat Fish Sauce: Don’t let the name deter you! A small amount of this fermented fish sauce doesn’t make the stew taste fishy; instead, it provides a powerful boost of umami, rounding out the flavors and adding an authentic depth. Look for high-quality brands like Red Boat.
- Marinara Sauce: A good quality marinara sauce forms the rich, tomatoey base of the stew. Choose a brand with no added sugar or artificial ingredients for Whole30 compliance.
- Carrots: Sweet and earthy carrots add color, texture, and natural sweetness. Cutting them into two-inch chunks ensures they cook through but still retain some bite.
- Cabbage: This often-underestimated vegetable is a star in this stew. When cooked with the pork, it becomes wonderfully tender and sweet, absorbing all the delicious flavors. A small head cut into eight wedges is perfect.
- Aged Balsamic Vinegar: A splash of aged balsamic vinegar at the end brightens the flavors, adds a touch of acidity, and balances the richness of the stew.
- Diamond Crystal Kosher Salt: Our preferred salt for its consistent crystal size and mild flavor, allowing for precise seasoning. Adjust to your taste.
- Freshly Ground Black Pepper: For a subtle kick and aromatic warmth.
- Italian Parsley (optional): A sprinkle of fresh, finely chopped Italian parsley adds a burst of fresh green color and herbaceous notes, perfect for garnish.
Step-by-Step Guide to Your Instant Pot Pork and Cabbage Stew
Making this hearty stew in your Instant Pot is incredibly straightforward. Follow these simple steps for a truly rewarding culinary experience.
1. Sauté the Aromatics
Begin by activating the sauté function on your Instant Pot. Allow the metal insert to heat up sufficiently before adding your chosen cooking fat. Swirl in olive oil, avocado oil, or ghee to coat the bottom of the pot. Once shimmering, add the thinly sliced onions. Sauté them gently until they become translucent and slightly softened, typically for about 5-7 minutes, stirring occasionally. Next, add the smashed garlic cloves and stir for approximately 30 seconds until they release their fragrant aroma. Be vigilant during this step; garlic can burn quickly, so keep an eye on it!

2. Layer the Pork and Seasonings
Once the aromatics are fragrant, gently add the cubed pork shoulder to the Instant Pot. Sprinkle the Magic Mushroom Powder (or kosher salt) and the Red Boat fish sauce over the pork. Stir thoroughly to ensure the seasonings are evenly distributed and coat every piece of pork. This step is vital for building a rich flavor base.

3. Add Marinara and Pressure Cook the Pork
Carefully pour the marinara sauce over the pork. **Important:** Do NOT stir the marinara sauce into the pork. Leaving it on top helps prevent a “Burn” error message, which can occur in some newer Instant Pot models if tomato-based sauces come into direct contact with the heating element before pressure is reached.
Turn off the sauté function. Securely lock the lid onto your pressure cooker and set the vent to the sealing position. Program the Instant Pot to cook for 35 minutes under high pressure. This duration ensures the pork becomes incredibly tender and flavorful.

4. Incorporate Vegetables
Once the pork has finished its initial cooking cycle, carefully release the pressure manually. You can do this immediately, or if you’re out and about, a natural pressure release is also perfectly fine – the stew will simply stay warm inside. Once the pressure has fully released, open the lid and add the carrot chunks and cabbage wedges to the stew. Lock the lid back on, ensure the vent is sealed, and program it to cook for an additional 3 minutes under high pressure. This short burst of pressure cooking is just enough to tenderize the vegetables without turning them mushy.

5. Finish and Serve
After the vegetables have cooked, manually release the pressure once more. Open the lid and stir in the aged balsamic vinegar. Give the stew a taste and adjust the seasoning with additional salt and freshly ground black pepper if needed. The flavors should be rich, savory, and balanced. Ladle the hot stew into bowls, topping each serving with a generous sprinkle of fresh, finely chopped Italian parsley for a vibrant finish. Serve immediately and savor this wholesome, comforting meal!

To save leftovers, allow the stew to cool completely before transferring it to an airtight container. It can be safely stored in the refrigerator for up to four days. For longer storage, this stew freezes exceptionally well. Portion it into freezer-safe containers or bags, ensuring there’s minimal air, and freeze for up to 4 months. When ready to enjoy, simply thaw overnight in the refrigerator and reheat gently on the stovetop or in the microwave until warmed through.
Creative Leftover Makeover Ideas
Don’t let leftover stew go to waste! This Instant Pot Pork and Cabbage Stew is incredibly versatile and can be transformed into exciting new meals with just a little creativity.
- Hearty Soup: One of our favorite leftover makeovers is converting it into a robust soup. Simply add extra broth (chicken or vegetable) in roughly a 1:1 ratio to the stew. You can also toss in some fresh or frozen vegetables like spinach, kale, green beans, or peas to bulk it up. Simmer until the added vegetables reach your desired tenderness, and you have a brand new, equally delicious meal!
- Omelet or Frittata Filling: Chop any large pieces of pork and vegetables from the stew, then mix them into your morning omelet or frittata for a savory and satisfying breakfast or brunch.
- Lettuce Wraps: Spoon the warm stew into large lettuce cups (like butter lettuce or romaine) for a light, refreshing, and low-carb meal. A squeeze of fresh lime juice can brighten it up even further.
- Stuffed Peppers or Squash: Use the stew as a delicious filling for bell peppers or hollowed-out winter squash. Bake until the peppers or squash are tender and the filling is heated through.
- Shepherd’s Pie Topping: Spread the leftover stew at the bottom of a baking dish and top with mashed cauliflower (for Paleo/Whole30) or mashed potatoes. Bake until bubbly and golden brown for a comforting casserole.
