Effortless Comfort: A Super Easy Tomato Soup!
For years, this creamy tomato soup has been a staple in my kitchen, cherished by my family for its speed, simplicity, and wholesome goodness. It’s a recipe I frequently prepare for my children, and even my older son, who typically isn’t a fan of coconut milk’s distinct flavor, absolutely adores it! So, if you’re hesitant about using coconut milk, rest assured, its presence here is subtle, lending only a beautiful creaminess without overpowering the vibrant tomato and leek flavors.
The secret to its irresistibly smooth texture lies in a powerful blender. No one enjoys unwelcome chunks in a creamy soup, and a high-speed blender, like a Vitamix, ensures a velvety, restaurant-quality consistency every time. This soup is not just delicious; it’s a healthy, satisfying option that fits seamlessly into busy schedules, offering a dairy-free, Paleo, Whole30, and gluten-free meal that doesn’t compromise on flavor or comfort.

Essential Ingredients for the Perfect Dairy-Free Tomato Soup
Crafting this delightful soup requires a few simple yet powerful ingredients, each playing a crucial role in building its depth of flavor and creamy texture. The beauty of this recipe lies in its reliance on pantry staples, making it accessible and easy to whip up whenever a craving strikes.

- Healthy Cooking Fat (Extra Virgin Olive Oil, Coconut Oil, or Avocado Oil): To keep this soup strictly dairy-free while ensuring rich flavor, we opt for one of these versatile cooking fats instead of butter. They provide a wonderful base for sautéing the aromatics and infuse the soup with a subtle, healthy richness. Choose your favorite, or what you have on hand – all three work beautifully.
- Leeks (White and Light Green Parts Only): The unsung heroes of this soup! I highly recommend using at least 2 cups of thinly sliced leeks. Their mild, sweet, onion-like flavor is absolutely fantastic and contributes significantly to the soup’s inherent sweetness and creamy consistency once blended. If leeks aren’t available, thinly sliced shallots or even a regular onion can be used, but try not to skimp on this foundational aromatic as it truly elevates the final dish. Properly sautéing these alliums is key to unlocking their full flavor potential and adding natural creaminess.
- Garlic: Six cloves might seem like a lot, but believe me, the more the merrier when it comes to garlic in this soup! It adds a pungent, aromatic depth that complements the sweetness of the leeks and the tang of the tomatoes perfectly. Freshly minced garlic is always best for maximum flavor.
- Fire-Roasted Canned Diced Tomatoes: This is where the magic truly happens. Opt for canned fire-roasted diced or whole tomatoes (Muir Glen is a personal favorite). Fire-roasting imparts a smoky, complex depth of flavor that you simply can’t achieve with regular canned or fresh tomatoes without significant effort. These pantry staples are a fantastic shortcut, saving you time and effort while delivering a superior flavor profile. While fresh tomatoes can be tempting, the convenience and intense flavor of fire-roasted canned tomatoes are unparalleled in this recipe.
- Broth (Bone Broth, Chicken Broth, or Vegetable Broth): The quality of your broth directly impacts the quality of your soup. A rich, flavorful broth provides an excellent foundation. I prefer homemade bone broth for its nutritional benefits and savory depth, but store-bought brands like Roli Roti or Bonafide Provisions are excellent choices. For a vegetarian version, be sure to use a high-quality vegetable broth that offers robust flavor.
- Full-Fat Coconut Milk: This is our secret weapon for achieving a luxurious, dairy-free creaminess. Full-fat coconut milk acts as a perfect substitute for heavy cream, providing a silky texture. My top recommendation is Aroy-D brand, often found in green Tetra Pak containers at Asian grocery stores, known for its neutral flavor and exceptional creaminess. If you are truly averse to coconut flavor, other alternative milks can be used, but the consistency may not be quite as rich and creamy. However, many who dislike coconut find its flavor undetectable in this soup, beautifully melded with the other ingredients.
- Kosher Salt: Essential for enhancing and balancing all the flavors in the soup. We’ll add it gradually and adjust to taste, ensuring perfect seasoning.
- Freshly Ground Black Pepper: A touch of freshly ground black pepper adds a subtle warmth and a hint of spice, bringing out the best in the tomatoes and aromatics.
- Fresh Basil: The ideal finishing touch! Thinly sliced fresh basil adds a bright, herbaceous, and fragrant kick that elevates each bowl. It’s a simple garnish that makes a world of difference, adding a pop of color and freshness.
Step-by-Step: How to Make Creamy Fire-Roasted Tomato Soup
Creating this rich and comforting soup is surprisingly straightforward. Follow these steps for a perfectly smooth and flavorful dairy-free tomato soup every time.
Step 1: Sauté the Aromatics
Begin by setting a large saucepan over medium heat. Allow it to heat thoroughly, then swirl in your chosen cooking fat—extra virgin olive oil, coconut oil, or avocado oil. Once shimmering, add the thinly sliced leeks along with a generous sprinkle of salt. Sauté, stirring occasionally, until the leeks become beautifully softened and translucent but do not allow them to brown, which typically takes about 3 to 5 minutes. This gentle cooking extracts their sweet, delicate flavor, which is crucial for the soup’s overall taste profile.

Step 2: Infuse with Garlic
Once the leeks are soft, add the minced garlic to the saucepan. Continue to cook for approximately 30 seconds, stirring constantly, until the garlic becomes wonderfully fragrant. Be careful not to burn the garlic, as this can impart a bitter taste. The aroma filling your kitchen will be incredible! After the garlic is fragrant, turn off the heat and carefully transfer the sautéed leeks and garlic to a plate, setting them aside for later.

Step 3: Blend the Tomatoes
Next, carefully pour the entire can of fire-roasted diced tomatoes, including all their juices, into a high-powered blender. I highly recommend a Vitamix blender for its ability to create an incredibly smooth purée. Blitz the tomatoes on high speed until they are completely smooth and free of any chunks. If your blender isn’t large enough to accommodate all the tomatoes at once, process them in batches to ensure a consistent, silky texture.

Step 4: Combine and Re-Blend for Maximum Creaminess
Pour about half of the puréed tomatoes into the empty saucepan. Return the remaining tomato purée to the blender, and now add the softened leeks and garlic that you set aside earlier. Blend this mixture on high until it is incredibly smooth and creamy. This second blend ensures that the aromatics are fully incorporated, contributing to the soup’s velvety texture and depth of flavor. Once smooth, pour the entire contents of the blender into the saucepan with the reserved tomato purée.

Step 5: Add Broth and Coconut Milk
To the saucepan with the combined purées, add the bone broth (or chicken/vegetable broth) and the full-fat coconut milk. The coconut milk is key to achieving that luscious, dairy-free creaminess. Stir everything together thoroughly, ensuring all ingredients are well combined. The soup will start to take on its characteristic creamy orange hue.

Step 6: Simmer and Develop Flavors
Increase the heat to medium-high and bring the soup mixture to a gentle boil. Once boiling, reduce the heat to medium-low, or just enough to maintain a steady simmer. Let the soup simmer for about 10 minutes, stirring occasionally to prevent sticking and to ensure even heating. This simmering time is crucial for allowing the flavors to meld and deepen, transforming the individual ingredients into a harmonious, comforting soup.

Step 7: Season to Perfection
After simmering, taste the soup. This is your chance to adjust the seasoning to your preference. Add more kosher salt if needed to brighten the flavors, and freshly ground black pepper for a touch of warmth and subtle spice. Don’t be shy here; proper seasoning can elevate a good soup to a great one. Continue tasting and adjusting until it reaches your ideal balance of flavors.

Step 8: Garnish and Serve
Once perfectly seasoned, ladle the hot, creamy fire-roasted tomato soup into bowls. For a beautiful finish and an extra burst of fresh flavor, garnish each serving with a generous sprinkle of thinly sliced fresh basil. The vibrant green of the basil contrasts beautifully with the rich red of the soup, and its herbaceous aroma adds a delightful final touch. Serve immediately and enjoy this comforting, dairy-free delight!

Storage and Make-Ahead Tips
This Fire-Roasted Tomato Soup is just as delicious the next day, making it perfect for meal prep. Should you find yourself with delightful leftovers, simply transfer the cooled soup to a sealed, airtight container. It will keep beautifully in the refrigerator for up to four days, retaining its creamy texture and robust flavor. For longer storage, this soup freezes exceptionally well. Portion it into freezer-safe containers or bags, and it can be stored in the freezer for up to 3 months. When you’re ready to enjoy, simply thaw overnight in the refrigerator or reheat gently on the stovetop or in the microwave. Always remember to garnish with fresh basil *after* reheating to maintain its vibrant color and fresh aroma.
