Ingredients for Success

Crafting these delectable Smashed Steak Skewers with Cherry Barbecue Sauce requires a selection of fresh, high-quality ingredients. Most of these can be found at your local grocery store, with a few specialty items easily accessible online. We’ll break down what you need for both the sauce and the skewers to ensure you have everything ready for a seamless cooking experience.

For the Irresistible Cherry Barbecue Sauce

  • Ghee, Avocado Oil, or Fat of Choice: Provides a rich base for sautéing and adds a subtle nutty flavor. Ghee offers a buttery taste, while avocado oil is neutral and high-heat tolerant.
  • Minced Shallot: Offers a milder, sweeter onion flavor compared to regular onions, perfect for a refined sauce.
  • Garlic: Essential aromatic for depth and pungency.
  • Minced Fresh Ginger: Adds a warm, spicy, and fragrant note that elevates the sauce’s complexity.
  • Tomato Paste: Concentrated tomato flavor that adds richness and body to the sauce.
  • Coconut Aminos (or Wheat-Free Tamari): A fantastic soy-free alternative to soy sauce, providing umami and a hint of sweetness. Crucial for Whole30 and Paleo compliance.
  • Aged Balsamic Vinegar: Contributes a delightful tang and sweetness, balancing the fruit and savory elements.
  • Apple Juice: Adds natural sweetness and a fruity backbone. We recommend Martinelli’s brand for its pure apple flavor.
  • Frozen Sweet Cherries, Roughly Chopped: The star of our sauce! Cherries provide a unique sweet and tart profile that’s incredibly delicious in BBQ sauce. Using frozen makes them convenient and available year-round. Ensure they are pitted.
  • Diamond Crystal Kosher Salt: For seasoning and enhancing all the flavors. Its texture allows for even distribution.
  • Freshly Ground Pepper: Adds a touch of warmth and spice.

For the Perfect Smashed Steak Skewers

  • Flank Steak: An excellent cut for this recipe. It’s lean, flavorful, and tenderizes beautifully when “smashed” and cooked quickly over high heat. Look for a piece with good marbling.
  • Diamond Crystal Kosher Salt: To season the steak generously before grilling, bringing out its natural beefy flavor.
  • Freshly Ground Pepper: A classic seasoning pairing for steak.
  • Melted Ghee, Avocado Oil, or High-Temperature Cooking Oil of Choice: Used to brush the steak before grilling, preventing sticking and promoting a beautiful crust.
  • Thinly Sliced Green Onions (Optional Garnish): Adds a fresh, pungent crunch and a pop of color, transforming the rustic skewers into a more elegant dish.

Step-by-Step: Crafting Your Smashed Steak Skewers with Cherry Barbecue Sauce

This recipe is divided into two main parts: preparing the luscious cherry barbecue sauce and then expertly crafting and grilling the smashed steak skewers. The good news is that the sauce can be made ahead of time, simplifying your grilling day! Follow these detailed instructions for a perfect meal every time.

Creating the Zesty Cherry Barbecue Sauce

The cherry barbecue sauce is a true cinch to make and is packed with incredible flavor. Its unique sweet-tart profile is what makes these steak skewers truly shine. You can easily prepare this sauce a day or two in advance and store it in the fridge, allowing the flavors to meld even further.

  1. Sauté the Aromatics: Begin by melting your preferred fat (ghee or avocado oil) over medium heat in a small saucepan. Add the minced shallots along with a pinch of salt. Sauté gently for about 5 minutes, or until the shallots become soft and translucent, releasing their sweet aroma.
  2. Build the Flavor Base: Stir in the minced garlic, fresh minced ginger, and tomato paste. Continue to sauté for another 30 seconds. This brief cooking time helps to bloom the flavors of the garlic and ginger and deepen the richness of the tomato paste.
  3. Four pictures that show how to make the base of the Whole30 BBQ sauce.
  4. Add Liquids and Cherries: Pour in the coconut aminos, aged balsamic vinegar, and apple juice. Finally, add the roughly chopped sweet cherries (fresh or frozen work perfectly). Give everything a good stir to combine.
  5. Simmer to Perfection: Bring the mixture to a boil over high heat. Once boiling, reduce the heat to low and let it simmer for about 10 minutes, or until the cherry mixture has visibly thickened to a sauce-like consistency. While simmering, stir occasionally, and use the back of your spoon or a potato masher to “smush” the cherries against the side of the pot. This helps to break them down and release their juices, integrating them fully into the sauce.
  6. Stirring in the pitted cherries into the Whole30-friendly BBQ sauce.
  7. Season and Set Aside: Taste the sauce and season with Diamond Crystal kosher salt and freshly ground black pepper as needed. Transfer the finished sauce to a bowl or measuring cup and set it aside to cool slightly while you prepare the steak. It can be stored in the refrigerator for up to 4 days.

Preparing the Smashed Steak Skewers

The “smashed” technique is key to getting tender, quick-cooking steak. It might sound unusual, but it makes a significant difference in both texture and cooking time.

  1. Soak Your Skewers: Approximately 30 minutes before you plan to grill, soak 16 bamboo skewers in water. This prevents them from burning on the grill. Alternatively, invest in reusable flat stainless-steel skewers, which are fantastic and won’t burn!
  2. Cut the Flank Steak: Take your 1½-pound slab of flank steak and prepare to cut it into 16 even pieces.
    • First, cut the steak in half lengthwise (along the grain).
    • Next, slice each half across the grain into four even pieces.
    • Finally, cut each of those pieces in half again, yielding a total of 16 pieces of steak. Cutting against the grain at this stage helps ensure maximum tenderness later.
  3. A piece of raw flank steak has dotted white lines superimposed on top to show how to cut out 16 even pieces.

  4. Skewer the Steak: Carefully thread each individual slice of beef through its center with a soaked skewer. Make sure the skewer goes through the widest part of the steak to keep it secure during smashing and grilling.
  5. A hand is holding a piece of flank steak that has been skewered by a soaked bamboo skewer.
A wooden cutting board has a bunch of flank steak kabobs waiting for the barbecue.
  6. Smash the Steak: Now for the fun part! Grab a sturdy meat pounder or even a small cast iron skillet. Place each skewered steak piece on a cutting board and confidently smash it until it’s about ½ inch thick. This process tenderizes the meat and ensures quick, even cooking. While our primal ancestors might have used sticks and stones, we recommend keeping your kitchen rock-free!
  7. A meat pounder is used to flatten the steak skewers.
  8. Season and Oil: Season both sides of the smashed steak with a generous amount of Diamond Crystal kosher salt and freshly ground black pepper. Then, lightly brush both sides with melted ghee or your chosen high-temperature cooking oil. This helps with browning and prevents sticking.
  9. Flattened steak skewers are seasoned with salt and pepper .

  10. Grill to Perfection: Fire up your backyard grill and preheat it to high heat. Once hot, carefully grease the grates to prevent sticking. Place the smashed steak skewers on the hot grill and cook for only 1 to 2 minutes per side. Flank steak cooks quickly when thin, so keep a close eye on it to achieve your desired doneness (medium-rare is often preferred for tenderness).

  12. Rest and Sauce: Remove the cooked beef skewers from the grill and let them rest for 5 to 10 minutes. This crucial step allows the juices to redistribute throughout the meat, resulting in a more tender and flavorful bite. After resting, generously brush the skewers with the prepared cherry barbecue sauce.
  13. Brushing on the Whole30 cherry BBQ sauce on the steak kabobs.
  14. Garnish and Serve: For an optional yet highly recommended touch, garnish your Smashed Steak Skewers with a sprinkle of thinly sliced fresh green scallions. This instantly transforms the rustic presentation into a more refined and appealing dish. Serve immediately and watch your family eagerly dig in!

Tips for Perfect Grilling & Skewers

Achieving grilling perfection with these smashed steak skewers is easy with a few simple tips:

  • Don’t Skip the Soak: Soaking bamboo skewers is vital to prevent them from catching fire on the grill. If you grill often, consider investing in reusable metal skewers for convenience and sustainability.
  • Precision in Cutting: Cutting flank steak properly is key to tenderness. Always cut against the grain after you’ve created smaller pieces. This shortens the muscle fibers, making the cooked steak easier to chew.
  • The Art of Smashing: Don’t be shy with the meat pounder! The goal is to get the steak to a uniform ½-inch thickness. This ensures even cooking and tenderizes the meat effectively.
  • High Heat, Quick Cook: Flank steak is lean and cooks fast. High heat creates a beautiful sear quickly without overcooking the inside. Aim for 1-2 minutes per side for medium-rare. A meat thermometer inserted into the thickest part should read 130-135°F (54-57°C) for medium-rare.
  • Resting is Essential: Always let your meat rest after grilling. This allows the juices to redistribute, preventing them from running out when you slice or bite into the steak. For these thin skewers, 5-10 minutes is sufficient.
  • Prep Ahead: The cherry barbecue sauce is a fantastic make-ahead component. Prepare it a day or two in advance and store it in the refrigerator. This frees up time on grilling day.
  • Clean Grill Grates: Always start with clean grill grates to prevent sticking and ensure those beautiful grill marks. A wire brush and a little oil before placing the meat make a big difference.

Variations and Customizations for Your Skewers

While this recipe is perfect as is, feel free to get creative and adapt it to your preferences:

  • Alternative Steak Cuts: If flank steak isn’t available, skirt steak or sirloin can also work well for smashing and skewering. Adjust cooking times slightly as needed.
  • Different Fruit Sauces: Experiment with other fruits for the BBQ sauce. Blueberries, raspberries, peaches, or even a mix of berries could create exciting new flavor profiles.
  • Add Veggies to Skewers: For a more complete kabob, add chunks of bell peppers, onions, zucchini, or cherry tomatoes to the skewers alongside the steak. If adding vegetables, you might want to cook the steak slightly less before adding the vegetables, or pre-cook denser vegetables slightly to ensure everything is done at the same time.
  • Spicier Kick: If you enjoy heat, add a pinch of red pepper flakes to the cherry barbecue sauce during simmering or a dash of cayenne pepper.
  • Indoor Cooking Option: No grill? No problem! You can roast these skewers in the oven. Preheat your oven to 400°F (convection) or 425°F (no convection). Place the skewers on a rimmed baking sheet and cook for 7-10 minutes, flipping halfway. Broil for an additional 2 minutes at the end for extra char if desired.
