The Ultimate Instant Pot Cream of Mushroom Soup: A Journey to Umami
This recipe is truly a mushroom lover’s paradise, designed to maximize the earthy, savory depth that mushrooms naturally offer. We’re not just stopping at fresh creminis; we’re enhancing the experience with dried porcini mushrooms for an extra layer of complexity, and for those who seek the pinnacle of mushroom flavor, a dash of Magic Mushroom Powder. The journey culminates with a garnish of Crispy Mushroom Chips, elevating the mushroom dial all the way to eleven!
Why Umami Matters
Umami, often described as the “fifth taste,” is that deep, savory, and satisfying flavor that leaves you wanting more. Mushrooms are natural powerhouses of umami, thanks to compounds like glutamates. By using both fresh and dried mushrooms, we create a multi-dimensional umami experience that is both robust and incredibly comforting. The addition of Magic Mushroom Powder further concentrates this savory essence, transforming a simple soup into a gourmet delight.
Health Benefits of Mushrooms
Beyond their amazing flavor, mushrooms offer a wealth of health benefits. They are low in calories, rich in B vitamins, selenium, potassium, and copper, and contain powerful antioxidants. Some varieties are also known for their immune-boosting properties. Incorporating more mushrooms into your diet is a delicious way to boost your nutrient intake and support overall well-being. This soup makes it easy and enjoyable to get your daily dose of these fantastic fungi.
A Healthier Alternative to Canned Soup
Say goodbye to those store-bought cans of cream of mushroom soup, loaded with sodium, artificial ingredients, and questionable thickeners. This homemade Instant Pot Cream of Mushroom Soup is not only bursting with authentic flavor but also shines as a healthy replacement. It’s incredibly versatile and can be used in all your favorite recipes that call for canned cream of mushroom soup—think casseroles, gravies, and sauces. The result will be genuinely unbelievable, adding a fresh, vibrant, and wholesome touch to your dishes. Plus, it’s Whole30-friendly, Paleo-compliant, and naturally dairy-free, making it suitable for a wide range of dietary needs without sacrificing taste.
Essential Ingredients for an Unforgettable Flavor
The magic of this soup comes from a carefully selected list of ingredients that work in harmony to build incredible depth of flavor. Each component plays a crucial role in creating a rich, creamy, and satisfying experience.
- Crispy Mushroom Chips: (Optional garnish, but highly recommended!) These add an amazing textural contrast and another layer of intense mushroom flavor.
- Cremini mushrooms: Also known as baby bellas, these provide the primary earthy, robust flavor.
- Ghee, avocado oil, or olive oil: Your choice of healthy fat for sautéing and building the flavor base. Ghee offers a buttery richness, while avocado or olive oil keep it dairy-free and light.
- Shallots: Milder and sweeter than onions, shallots contribute a delicate aromatic foundation.
- Leeks: These add a subtle, sweet oniony flavor that complements the mushrooms beautifully. Ensure they are thoroughly cleaned.
- Garlic: An indispensable aromatic, garlic enhances the savory profile and adds warmth.
- Dried porcini or mixed mushrooms: These are the secret weapon for an intense umami punch. They rehydrate in the soup, infusing it with their concentrated flavor.
- Magic Mushroom Powder or Diamond Crystal kosher salt: Magic Mushroom Powder (a blend of dried mushrooms and spices) amplifies the umami. If you don’t have it, good quality kosher salt is essential for seasoning.
- Chicken broth or bone broth: The liquid base, providing savory notes and body. Bone broth adds extra nutrients and depth.
- Fresh thyme sprigs: Earthy and fragrant, thyme pairs perfectly with mushrooms and infuses the soup with a lovely herbal aroma.
- Coconut cream: The key to the soup’s rich, dairy-free creaminess. Use the solidified cream from a chilled can of full-fat coconut milk for the best results.
- Freshly squeezed lemon juice: A bright, acidic finish that cuts through the richness and enhances all the flavors. Don’t skip it!
- Freshly ground black pepper: For a subtle spicy kick and overall flavor balance.
- Fresh chives, thinly sliced (optional garnish): Adds a fresh, oniony note and a pop of color.
- Extra virgin olive oil (optional garnish): A final drizzle adds a luxurious sheen and peppery finish.
Instant Pot Magic: Trusting the Process for Superior Taste
Before diving into the steps, it’s important to understand that while this is an Instant Pot recipe, it’s not a “dump-and-cook-in-5-minutes” kind of dish. For truly exceptional flavor and texture, some thoughtful steps are required. Just like the famous Philadelphia basketball fans, you need to “TRUST THE PROCESS.” These seemingly “fussy” steps are what elevate this soup from good to truly magnificent.
The Sautéing Secret
One critical step is thoroughly sautéing the fresh mushrooms for 12-15 minutes before pressure-cooking. This isn’t just about softening them; it’s about allowing their moisture to evaporate and their natural sugars to caramelize through the Maillard reaction. This process concentrates their flavor, turning them into golden, savory nuggets that will form the backbone of your soup’s rich taste. Skipping this step would result in a watery, less flavorful soup, so embrace the sauté – it’s worth every minute!
Pressure Cooking Perfection
The Instant Pot truly shines in its ability to tenderize ingredients and meld flavors quickly under high pressure. After the initial sauté, the Instant Pot cooks the mushrooms, aromatics, and broth to perfection, extracting every ounce of flavor and creating a deeply cohesive base in a fraction of the time it would take on the stovetop. This ensures a complex and well-developed taste profile without hours of simmering.

Blending for Silkiness: Immersion vs. High-Speed
Achieving that perfectly smooth, velvety texture is another key to this soup’s success. While an immersion blender offers convenience and less cleanup, it often leaves a slightly chunkier soup. For an unparalleled silky consistency, a high-speed countertop blender is your best friend. This extra step ensures a restaurant-quality texture that melts in your mouth. You’ll be delighted and thankful you didn’t take the easy way out, as the final result is truly astounding!
Step-by-Step: Crafting Your Cream of Mushroom Soup
Prep Work: Mushroom Chips and Slicing
First things first: prepare your crispy mushroom chips. While they are an optional garnish, they add a fantastic crunchy texture, like savory umami croutons, that truly elevates the soup. Follow this simple recipe to get them baking in the oven while you start the soup.

Next, tackle your fresh mushrooms. You can slice them by hand for a rustic look, but for speed and uniform results, a food processor with a slicing disc will save you considerable time and effort.

Building the Flavor Base in the Instant Pot
Begin by turning on the “Sauté” function on your Instant Pot. Once the metal insert is hot and shimmering, add your ghee, avocado oil, or olive oil. Toss in the sliced cremini mushrooms. This is where the magic begins: cook, stirring occasionally, until all the liquid released from the mushrooms has completely evaporated and the mushrooms themselves are beautifully browned. This crucial step takes about 12-15 minutes and intensely concentrates the mushroom flavor. Do not rush or skip it!

Next, add the sliced leeks and diced shallots to the pot. Sauté for about a minute, allowing them to soften slightly and release their sweet aromas, mingling with the browned mushrooms.

Stir in the minced garlic cloves, dried porcini or mixed mushrooms (no need to rehydrate them beforehand, they’ll soften in the broth!), and 1 teaspoon of Magic Mushroom Powder for an extra boost of umami. If Magic Mushroom Powder isn’t available, use 1 teaspoon of Diamond Crystal brand kosher salt instead.

Pour in 4 cups of chicken broth or nourishing bone broth, ensuring all the ingredients are well-combined. Finally, stir in the fresh thyme sprigs, which will infuse the soup with their aromatic essence during cooking.

Pressure Cooking and Blending
Turn off the “Sauté” function by pressing “Cancel.” Secure the lid on your Instant Pot, making sure the venting knob is sealed. Program the Instant Pot to cook for 5 minutes under high pressure. Once the cooking cycle is complete, carefully release the pressure manually. After the pressure has fully released, open the lid and fish out the two thyme sprigs.

Now, it’s time to achieve that luxurious creamy texture. You have two main options:
- Immersion Blender: This is the quickest option and means less cleanup. However, it will result in a slightly chunkier soup. Use this if you’re truly short on time or prefer a more rustic texture.
- High-Speed Countertop Blender (Recommended): For the smoothest, silkiest, most professional-tasting soup, a high-speed blender is ideal. Remember to always blend hot liquids safely: fill the blender no more than halfway, remove the plastic center cap from the lid (to allow steam to escape), and place a clean kitchen towel over the opening to prevent splatters.
Assuming you’re opting for the superior countertop blender method: Ladle about half of the cooked soup into your blender container, ensuring you do not exceed the halfway mark. Secure the lid, leaving the center hole open, and drape a clean kitchen towel over it. Start the blender on a low speed, gradually increasing it until the soup is perfectly smooth and creamy.

Pour the blended soup back into the Instant Pot insert. Transfer the remaining unblended soup from the Instant Pot into a large measuring cup. Now, pour the unblended soup from the measuring cup into the blender, and add the coconut cream. This two-part blending ensures everything fits safely and evenly incorporates the coconut cream for maximum smoothness.

Following the same careful blending instructions, blitz the second half of the soup with the coconut cream until it’s perfectly smooth.

Stir both blended halves of the soup together in the Instant Pot insert until thoroughly combined and uniformly creamy.

Final Touches and Seasoning
Squeeze in the fresh lemon juice – this bright acidity is key to balancing the rich, earthy flavors. Taste the soup and adjust the seasoning as necessary. You might want more salt, a touch more Magic Mushroom Powder for added depth, freshly ground black pepper, or even a splash more lemon juice to achieve your perfect balance. Serve immediately, piping hot.

Ladle the luscious soup into bowls, and garnish generously with your crispy mushroom chips and a sprinkle of thinly sliced fresh chives. For an extra touch of elegance and flavor, a drizzle of high-quality extra virgin olive oil can be added if desired. Voilà! Your masterpiece is ready to be savored.

No Instant Pot? No Problem! (Stovetop & Slow Cooker Methods)
Don’t have an Instant Pot or pressure cooker? No worries! You can still enjoy this delicious cream of mushroom soup using traditional methods. The key steps remain the same, just with adjusted cooking times and techniques. These alternative methods ensure everyone can experience the rich, umami flavors of this wholesome soup.
Stovetop Method
- First, rehydrate the dried porcini mushrooms by soaking them in a small bowl of warm water for at least 30 minutes, or until they are soft and pliable. Reserve the soaking liquid (strain it to remove any grit) for later.
- Follow steps 2 through 6 of the main recipe in a large 6-quart stockpot or Dutch oven over medium heat. This includes sautéing the fresh mushrooms until browned and dry, then adding the leeks, shallots, garlic, and dried mushrooms.
- Once the aromatics are fragrant, pour in the chicken or bone broth along with the reserved mushroom soaking liquid (if using). Stir in the fresh thyme sprigs.
- Increase the heat to high and bring the soup to a gentle boil.
- Once boiling, reduce the heat to medium-low, or just enough to maintain a steady simmer. Partially cover the pot and cook for at least 30 minutes (or up to an hour for deeper flavor), stirring occasionally, until all the flavors have melded beautifully and the vegetables are very tender.
- Fish out the thyme sprigs and then proceed to finish the soup by following steps 9 through 17 of the Instant Pot instructions for blending, adding coconut cream, and seasoning.
Slow Cooker Method
- Just like the stovetop method, begin by rehydrating the dried porcini mushrooms in warm water for at least 30 minutes. Strain and reserve the liquid.
- Cook steps 2 through 5 of the main recipe in a large stockpot or skillet over medium heat. This means sautéing your fresh mushrooms, then adding the leeks, shallots, and garlic, and dried mushrooms. This initial sauté is crucial for flavor development.
- Transfer the sautéed contents from the skillet into your slow cooker insert.
- Pour in 4 cups of chicken broth (and the reserved mushroom soaking liquid). Stir in the fresh thyme sprigs.
- Cover the slow cooker and program it to cook on low for 4 to 6 hours, or on high for 2 to 3 hours, until the vegetables are incredibly tender and the flavors are fully developed.
- Once cooking is complete, carefully remove the thyme sprigs. Continue to finish the soup by following steps 9 through 17 of the Instant Pot instructions for blending, adding coconut cream, and seasoning.
Storage and Meal Prep Tips
This Instant Pot Cream of Mushroom Soup is not only delicious but also fantastic for meal prepping. You can easily make a large batch to enjoy throughout the week or freeze for future meals.
- Refrigeration: Store any leftover soup in an airtight container in the refrigerator for up to 4 days. The flavors often deepen overnight, making it even more delicious the next day.
- Freezing: For longer storage, this soup freezes beautifully. Transfer cooled soup to freezer-safe containers or bags, leaving a little headspace as liquids expand when frozen. It can be stored in the freezer for up to 4 months. Thaw overnight in the refrigerator before reheating.
- Reheating: Gently reheat the soup on the stovetop over medium-low heat, stirring occasionally, until warmed through. If the soup separates slightly after reheating (which can sometimes happen with dairy-free creams), a quick blitz with an immersion blender or a whisk will help re-emulsify it, bringing back its creamy texture.
- Make Ahead: Prepare the soup entirely, cool it, and then store it. This makes for a quick and healthy meal on busy weeknights.
Having a batch of this wholesome mushroom soup ready means you’re always just minutes away from a comforting and nutritious meal. It’s perfect on its own, or as a base for other recipes!

Ingredients
- Crispy Mushroom Chips an optional garnish—but they add awesome texture!
- 2 pounds cremini mushrooms thinly sliced
- 2 tablespoons ghee avocado oil, or olive oil
- 2 medium leeks white and light green ends only, cleaned, trimmed, and thinly sliced
- 2 large shallots diced
- 6 garlic cloves minced
- ¼ ounce dried porcini or mixed mushrooms
- Magic Mushroom Powder or Diamond Crystal kosher salt
- 4 cups chicken broth or bone broth
- 2 fresh thyme sprigs
- ¾ cup coconut cream or the solidified cream from a chilled can of full-fat coconut milk
- 1 tablespoon freshly squeezed lemon juice
- Freshly ground black pepper
- 1 bunch fresh chives thinly sliced (optional garnish)
- Extra virgin olive oil optional garnish
Instructions
-
First things first: Make some mushroom chips. While optional, these Crispy Mushroom Chips add a wonderful crunchy umami “crouton” element! Follow this super-simple recipe and pop them in the oven.
-
Next, prepare your sliced mushrooms. You can slice them by hand, but a food processor will significantly save you time.
-
Turn on the “Sauté” function on your Instant Pot. Once the metal insert is hot, add the ghee or your fat of choice. Toss in the mushrooms and cook, stirring occasionally, until all the liquid released from the mushrooms has evaporated and they are nicely browned. This crucial step takes about 12-15 minutes and concentrates the mushroom flavor. Do not skip this step!
-
Toss in the leeks and shallots and cook for about a minute until softened and fragrant.
-
Stir in the minced garlic cloves, dried mushrooms (no need to rehydrate them first!), and 1 teaspoon of Magic Mushroom Powder. (If you don’t have Magic Mushroom Powder, add 1 teaspoon of Diamond Crystal brand kosher salt instead.)
-
Pour in 4 cups of chicken broth and stir in the fresh thyme sprigs.
-
Turn off the “Sauté” function by hitting “Cancel.” Lock the lid on the Instant Pot, and program it to cook for 5 minutes under high pressure.
-
When the soup is done cooking, carefully release the pressure manually. Once the pressure is fully released, open the lid and fish out the two thyme sprigs.
Now, you have two choices to cream-ify your soup:
-
You can use an immersion blender—which will mean fewer things to wash, but you’ll end up with a slightly chunkier soup. This is a good option if you’re in a rush or prefer a more rustic texture.
-
My strong preference is to use a high-speed countertop blender to get the soup as smooth and creamy as possible. (Always ensure you follow these safety instructions if you’re blending hot liquids to prevent spills or explosions.)
-
If using a countertop blender: Ladle about half the soup into the blender container, making sure you don’t go above the halfway point. Secure the lid, leaving the plastic middle piece (vent) open, and place a clean kitchen towel on top.
-
Slowly increase the speed of the blender and blitz until the soup is completely smooth.
-
Transfer the blended soup back into the Instant Pot insert. Then, ladle the remaining unblended soup from the Instant Pot into the blender and add the coconut cream.
-
Following the same safe blending instructions as above, blitz the soup and coconut cream together until smooth.
-
Stir both blended halves of the soup thoroughly in the Instant Pot insert until fully combined.
-
Squeeze in the fresh lemon juice and taste the soup for seasoning. Adjust as necessary with extra salt, Magic Mushroom Powder, black pepper, and/or additional lemon juice to achieve your desired flavor balance.
-
Ladle the hot soup into bowls. Top generously with Crispy Mushroom Chips, a sprinkle of chopped chives, and a drizzle of extra virgin olive oil if desired. Enjoy!
-
You can store the soup in an airtight container in the fridge for up to 4 days or freeze it for up to a few months. After reheating, a quick blend with an immersion blender can help re-emulsify it if separation occurs.
Notes
- Rehydrate the dried porcini mushrooms in a bowl of warm water for at least 30 minutes or until softened. Reserve the soaking liquid (strained) for later.
- Follow steps 2 through 6 of the main recipe, but perform them in a large 6-quart stockpot or Dutch oven over medium heat.
- After adding the broth and thyme (and reserved mushroom liquid), increase the heat to high and bring the soup to a boil.
- Decrease the heat to medium-low to maintain a gentle simmer. Cook, partially covered, for 30 minutes to 1 hour, or until the flavors are well-melded and vegetables are very tender.
- Fish out the thyme sprigs and finish the soup by following steps 9 through 17 of the Instant Pot instructions (blending, adding coconut cream, and seasoning).
Slow cooker instructions:
- First, rehydrate the dried porcini mushrooms in warm water for at least 30 minutes. Strain and reserve the liquid.
- Cook steps 2 through 5 of the main recipe in a large stockpot or skillet over medium heat. This ensures the crucial browning of the mushrooms.
- Transfer the sautéed contents to your slow cooker insert.
- Pour in 4 cups of chicken broth (and reserved mushroom liquid) and stir in the fresh thyme sprigs.
- Program the slow cooker to cook on low for 4 to 6 hours or on high for 2 to 3 hours.
- Fish out the thyme sprigs and finish the soup by following steps 9 through 17 of the Instant Pot instructions (blending, adding coconut cream, and seasoning).
