Before I dive into the heart of this post, I want to take a moment to express my sincere gratitude to Michelle for inviting me to be a guest blogger. Among the many food bloggers I admire, Michelle holds a truly special place in my heart. We share a unique synergy in our cooking philosophies and flavor preferences. In my household, she’s affectionately known as one of my “second mothers,” a title she shares with Stacy from Paleo Parents. And just like that, I’ve already started rambling before getting to the main event! My apologies, but sometimes the enthusiasm for good food and good company just bubbles over.

Today, I’m absolutely thrilled to share a recipe that perfectly encapsulates everything I adore about slow cooking: Lamb Osso Bucco With Gremolata.

The Irresistible Allure of Braising: Why It’s a Kitchen Game-Changer

My love affair with braising runs deep, and for good reason. This culinary technique is practically foolproof, consistently delivering meals that are incredibly tender, flavorful, and truly voluptuous. Braising transforms tougher, often more affordable, cuts of meat into succulent, melt-in-your-mouth delights. The magic lies in the low and slow cooking process, where tough connective tissues in the meat slowly break down into gelatin. This not only tenderizes the meat but also enriches the braising liquid, creating a deeply flavorful sauce that is the hallmark of a perfectly braised dish.

If you’re looking to truly master the art of braising, I cannot recommend Molly Stevens’ authoritative book, All About Braising, highly enough. It’s an indispensable resource that covers every facet of this incredible cooking method. One of the most brilliant tips I gleaned from her work is to place a sheet of parchment paper directly on top of the stew before sealing the pot with its lid and placing it in the oven. This seemingly simple step significantly reduces the airspace between the food and the lid, creating a much tighter seal. The result? More efficient moisture retention, enhanced flavor development, and an even more tender final product.

Essential Equipment: The Mighty Dutch Oven

Speaking of perfect braises, this recipe was the ideal opportunity to put my brand new Le Creuset 7-¼ Quart Dutch Oven to the test. A good quality Dutch oven is truly an investment piece for any serious home cook, especially when it comes to braising. Its heavy construction, excellent heat retention, and tight-fitting lid are essential for creating the ideal environment for slow cooking. The even heat distribution prevents hot spots, ensuring that your lamb shanks cook uniformly and develop that incredible tenderness we’re aiming for.

While I wanted this Lamb Osso Bucco to pay homage to the traditional Osso Bucco Milanese—which necessitates the bright, herbaceous gremolata—I decided to add my own subtle twist. I included a touch of fresh thyme to the classic aromatic combination. This addition imparts a wonderful woodiness that complements the richness of the lamb beautifully, elevating the overall flavor profile without straying too far from its Italian roots.

Discovering Lamb Osso Bucco: A Revelation in Flavor

My journey to making Lamb Osso Bucco began quite serendipitously when my good friends at US Wellness Meats generously sent me some lamb shanks to experiment with. As a self-proclaimed lamb addict, this was a truly exciting development. If there’s lamb in my freezer, it rarely stays there for long; it’s usually destined for a quick and delicious meal. Once I learned about the possibility of preparing lamb as osso bucco, my mind instantly raced with endless possibilities for flavor combinations and culinary enhancements that could be applied to this magnificent dish.

The beauty of lamb shanks prepared as osso bucco is multifaceted. I absolutely adore the way the meat becomes incredibly succulent, literally falling off the bone with the slightest coaxing. Each bite is rich, deeply flavorful, and unbelievably melty. But, let’s be honest, the true crown jewel of this dish, the absolute best part, is undoubtedly the bone marrow. You simply cannot, under any circumstances, pass up on the marrow. It’s a concentrated burst of flavor, a rich, unctuous delicacy that I wouldn’t trade for any sum of money in the world. (Okay, maybe for a few million bucks—but only if I could spend it on a lifetime supply of pastured meat, a fantastic house to roam in, and perhaps my own private CrossFit gym, exclusively for Michelle, her family, and my closest food blogging comrades.)

The Perfect Pairing: Serving Suggestions and Gremolata’s Fresh Finish

To truly complete this culinary experience, I highly recommend serving the braised lamb atop a bed of creamy mashed cauliflower. The lightness and subtle flavor of the cauliflower provide a wonderful contrast to the richness of the lamb. And, of course, don’t forget that vital final touch: a generous sprinkling of the vibrant gremolata over the cross-cut shanks. This fresh, herbaceous topping cuts through the richness of the meat, adding a bright acidity and aromatic lift that elevates the entire dish. And please, for the love of all things delicious, make sure to savor every last bit of that incredible bone marrow.

Lamb Osso Bucco with Gremolata Recipe

This recipe serves 4-6 people, making it perfect for a cozy family dinner or a small gathering.

Ingredients:

For the Osso Bucco:

  • 2½ – 3 lbs cross-cut lamb shanks
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons ghee (or olive oil, for non-paleo)
  • 1 large carrot, roughly chopped
  • 1 celery stalk, roughly chopped
  • 1 medium yellow onion, coarsely chopped
  • ½ cup chopped peeled tomatoes (can use fresh, diced, or canned crushed tomatoes)
  • ½ bulb fennel, chopped (adds a lovely anise note)
  • 3 cloves garlic, minced
  • 2 teaspoons fresh thyme leaves
  • 1 cup dry white wine (such as Pinot Grigio or Sauvignon Blanc)
  • ½ cup chicken stock (preferably homemade or low-sodium)
  • 1 dried bay leaf

For the Gremolata:

  • Large handful of fresh Italian parsley, finely chopped
  • 1 clove garlic, minced very finely
  • Zest of 1 organic lemon

Procedure:

  1. Preheat Oven & Prepare Lamb: Preheat your oven to 300°F (150°C). Pat the lamb shanks dry with paper towels – this is crucial for achieving a good sear. Season them generously on all sides with salt and freshly ground black pepper.
  2. Sear the Lamb: Heat 2 tablespoons of ghee (or olive oil) in a large Dutch oven or heavy-bottomed pot over medium-high heat until shimmering. Once hot, carefully add the seasoned lamb shanks to the pot. Brown them well on all sides, achieving a deep golden crust (this is called the Maillard reaction and builds incredible flavor). You may need to do this in batches to avoid overcrowding the Dutch oven, which would steam the meat instead of searing it. Once browned, transfer the lamb shanks to a platter and tent loosely with aluminum foil to keep warm.
  3. Sauté Aromatics: Add the chopped carrot, celery, onion, tomatoes, fennel, minced garlic, and fresh thyme leaves to the Dutch oven. Stir and sauté over medium heat for 5-7 minutes, or until the vegetables begin to soften and become fragrant. Scrape up any browned bits from the bottom of the pot as you stir – these are packed with flavor!
  4. Deglaze & Build Braising Liquid: Pour in the white wine and chicken stock. Increase the heat to medium-high and bring the liquid to a simmer, scraping vigorously with a wooden spoon to loosen any remaining flavorful bits stuck to the bottom of the pot. Allow the liquid to simmer gently for about 5 minutes, reducing slightly.
  5. Nestle Lamb & Braise: Reduce the heat to low. Carefully nestle the browned lamb shanks back into the Dutch oven in an even layer. It’s perfectly fine if they are touching. Add the dried bay leaf to the pot.
  6. The Parchment Paper Trick (Optional but Recommended): Take a sheet of parchment paper, crinkle it slightly, and place it directly on top of the stew, allowing it to gently droop down to almost touch the meat. This creates an even tighter seal and helps keep the lamb moist and tender during the long braise. Place the lid tightly on top of the Dutch oven.
  7. Slow Cook to Perfection: Transfer the Dutch oven to your preheated oven and braise for 2 to 2½ hours, or until the lamb meat is incredibly tender and easily falls from the bone with a fork. Cooking time may vary slightly depending on the thickness of your shanks and your oven.
  8. Rest & Reduce Sauce: Carefully remove the tender cross-cut lamb shanks from the Dutch oven and place them back on the platter, tenting them with foil to rest. If you choose, use a ladle or spoon to skim off any excess fat from the surface of the remaining braising liquid. Transfer the Dutch oven back to the stovetop and simmer the braising liquid over medium heat, stirring occasionally, until the sauce has reduced by about ¼ and has slightly thickened. This concentrates the flavors beautifully.
  9. Prepare Gremolata: While the sauce reduces, assemble the gremolata. In a small bowl, combine the finely chopped Italian parsley, very finely minced garlic clove, and the zest of one lemon. Stir gently to combine.
  10. Serve & Enjoy: To serve, plate the succulent lamb osso bucco, spooning some of the rich, reduced sauce and vegetables over and around the meat. Finish with a generous light sprinkling of the fresh gremolata. Don’t forget to extract and savor the delicious bone marrow!

This Lamb Osso Bucco is more than just a meal; it’s an experience. The rich, savory lamb, tenderized to perfection through patient braising, is wonderfully complemented by the bright, zesty notes of the gremolata. It’s a dish that warms the soul and satisfies even the most discerning palates. We hope you enjoy bringing this incredible creation to your own kitchen. Happy cooking!
