The Allergy-Friendly Twist: Absolutely Peanut-Free!

Many of us cherish the classic flavors of a peanut butter and jelly sandwich, but for those with peanut allergies or simply looking for alternatives, enjoying that taste can be a challenge. That’s where these incredible “PB&J” Energy Balls come in! Despite their name, there’s not a single trace of peanut butter or actual jelly here. Instead, we’ve ingeniously combined nutty textures with sweet, fruity flavors to perfectly mimic that beloved childhood snack. The result is a crave-worthy, bite-sized treat that evokes fond memories of after-school indulgence, without any of the common allergens.

This recipe was originally developed for our cookbook, Ready or Not!, with the goal of creating a portable, satisfying, and quick-to-make snack. Whether you’re preparing them for a lunchbox, a pre-workout boost, or just a healthier treat, their simplicity and deliciousness make them a standout. These energy balls offer a safe and delightful way for everyone to enjoy the essence of PB&J, making them a fantastic option for school events, parties, or just everyday snacking at home.

Power-Packed with Just 5 Wholesome Ingredients!

Forget the refined sugars and processed ingredients often found in traditional PB&J sandwiches or store-bought snacks. Our homemade no-bake “PB&J” Energy Balls are a testament to how incredible whole, unprocessed ingredients can be. They are crafted from a simple blend of just nuts and fruit, complemented by a tiny pinch of salt to enhance all the natural flavors. This minimalist approach ensures you’re getting pure, unadulterated goodness in every bite.

  • Medjool Dates: These aren’t just for sweetness; they’re the binding magical ingredient! Rich in natural sugars, fiber, and essential minerals like potassium, dates provide a caramel-like flavor and a wonderfully sticky texture that holds everything together without any added syrups or unhealthy binders.
  • Dry-Roasted Unsalted Almonds: Offering a satisfying crunch and a dose of healthy fats, protein, and vitamin E, almonds are a nutritional powerhouse. Their mild, buttery flavor perfectly complements the fruit, providing that essential “nutty” profile without peanuts.
  • Freeze-Dried Strawberries: This is where the “jelly” flavor comes from! Freeze-dried fruit is a fantastic way to get intense fruit flavor without excess moisture or added sugar. Strawberries provide a vibrant, sweet-tart burst that makes these balls undeniably “PB&J”-like.
  • Unsweetened Shredded Coconut: Toasted to golden perfection, shredded coconut adds a subtle tropical note, a lovely texture, and healthy fats. It also serves as a beautiful and delicious coating for the finished balls.
  • Kosher Salt (Diamond Crystal brand recommended): A tiny pinch of salt is crucial. It balances the sweetness of the dates and strawberries, elevating all the flavors and making them truly sing.

When you need a quick and effective pick-me-up – whether it’s after an invigorating long run, a challenging gym workout, or an afternoon spent gardening with maniacal energy – simply pop one or two of these delightful balls into your mouth. The combination of natural sugars for quick energy, fiber for sustained fullness, and healthy fats for satisfaction will leave you feeling revitalized and ready to tackle anything. And the best part? Not only will you feel like a kid again, but your actual kids will absolutely adore them too, making snack time a breeze for the whole family!

Expert Tips for Perfect “PB&J” Energy Balls Every Time

Making these energy balls is straightforward, but a few insider tips can elevate your experience and ensure perfectly delicious results:

Embrace Fruit Variety: Customization is Key!

While strawberries deliver that classic “jelly” taste, don’t hesitate to experiment with other freeze-dried fruits to discover new favorite flavor combinations. I’ve had tremendous success and delicious feedback when preparing these energy balls with freeze-dried blueberries and raspberries. Blueberries offer a slightly tarter, deeper fruit note, while raspberries bring a bright, tangy burst. You could even try a blend of different freeze-dried berries for a mixed berry “jelly” effect. Just ensure the fruit is genuinely freeze-dried and contains no added sugars or oils to maintain the recipe’s whole-food integrity.

The Secret to Success: Perfectly Moist Dates

The quality and moisture content of your Medjool dates are paramount, as they act as the primary binder for these no-bake treats. If your dates have been stored in the pantry for an extended period and feel dry or firm, they might struggle to form a cohesive, sticky paste in the food processor. To remedy this, simply add a few drops of warm water (or a teaspoon at a time) when you’re blending them. The warmth and moisture will help soften the dates, allowing them to break down into a beautifully pliable, sticky ball that will effortlessly bind all the other ingredients. Avoid adding too much water at once; incrementally add drops until you achieve the desired sticky consistency.

Storing Your Energy Boosters

These energy balls are not only delicious but also incredibly convenient for meal prep. Once formed and coated, they store exceptionally well. You can place them in an airtight container and refrigerate them for up to one week. This makes them ideal for grab-and-go snacks throughout your busy week. For longer-term storage, they freeze beautifully! Simply arrange them in a single layer on a parchment-lined baking sheet until solid, then transfer them to a freezer-safe bag or container. They will stay fresh in the freezer for up to a month. When you’re ready to enjoy a frozen treat, simply pull them out and let them thaw for a few minutes at room temperature, or enjoy them straight from the freezer for a firmer, cooler snack.

Serving Suggestions and Beyond

Beyond being a fantastic standalone snack, these “PB&J” Energy Balls are incredibly versatile. Pack them in school lunches for a healthy and safe treat, bring them along on hikes or long drives, or keep them in your desk drawer for an afternoon slump. They are also wonderful served alongside a cup of coffee or tea for a light breakfast or a guilt-free dessert. Consider doubling the batch if you have a busy week ahead or a family that devours healthy snacks quickly!

Let’s Make Peanut-Free “PB&J” Energy Balls!

This recipe yields approximately 15 energy balls. I typically enjoy 2 balls as a satisfying snack portion.

Ingredients:

  • ½ cup (10 grams) freeze-dried strawberries (ensure they are 100% fruit with no added sugar)
  • ½ cup (60 grams) dry-roasted unsalted almonds (for best flavor and texture)
  • 1 cup (150 grams) pitted and chopped dried Medjool dates (fresh, moist dates work best for binding)
  • A generous pinch of Diamond Crystal brand kosher salt (adjust to taste, enhances sweetness)
  • ¼ cup unsweetened shredded coconut, toasted in a 300°F (150°C) oven until golden, about 3 minutes (watch carefully to prevent burning)

Equipment:

  • Food processor (essential for achieving the right consistency)
  • Large mixing bowl
  • Silicone spatula (for scraping down the bowl)
  • Shallow plate or parchment paper (for rolling the balls in coconut)

Method:

  1. Begin by pulsing the freeze-dried strawberries in your food processor. Process until they transform into a fine, vibrant pink powder. Allow the resulting dust to settle briefly before proceeding.

  2. Add the dry-roasted unsalted almonds to the food processor bowl with the strawberry powder. Pulse several times until the almonds are roughly chopped. You want some texture, not a fine meal. Transfer this mixture of chopped almonds and strawberry powder into a separate large bowl.

  3. Without cleaning the food processor bowl, add the pitted and chopped Medjool dates. Pulse a few times to roughly chop the pieces further. Then, continue to pulverize the dates until they come together, forming a single, sticky ball that thwacks against the side of the work bowl. This indicates the perfect consistency for binding. If your dates are particularly dry, add a few drops of water, one at a time, and continue processing until the sticky ball forms.

  4. Return the reserved strawberry powder and chopped almonds to the food processor bowl with the sticky date paste. Add a pinch of kosher salt. Pulse a few more times until all the ingredients are thoroughly combined and form a dense, uniform mass that comes together as a nutty, slightly sticky dough. If the mixture doesn’t come together easily, add another few drops of water and pulse again until it reaches the desired consistency.

These peanut-free “PB&J” Energy Balls are made with just nuts and fruit (and a pinch of salt). They’re portable no-bake Paleo and vegan healthy snacks that taste just like peanut butter and jelly!

Ingredients

  • ½ cup freeze-dried strawberries
  • ½ cup dry-roasted unsalted almonds
  • 1 cup pitted and chopped dried Medjool dates
  • Diamond Crystal brand kosher salt
  • ¼ cup unsweetened shredded coconut, toasted in a 300°F oven until golden, about 3 minutes

Instructions

  1. Pulse the freeze-dried strawberries in a food processor until it forms a powder. Let the pink dust settle.
  2. Toss in the almonds. Pulse to roughly chop the almonds. Transfer the chopped almonds and strawberry powder to another bowl.
  3. Throw the dates into the now-empty food processor bowl, and pulse a few times to roughly chop up the pieces. Then, pulverize the dates until they form a sticky ball that thwacks against the side of the work bowl. (If your dates are especially dry, you can add a few drops of water to get the right consistency.)
  4. Add the strawberry powder, almonds, and a pinch of salt to the sticky date paste in the food processor bowl. Pulse a few times until combined. The result should be a dense mass that comes together as a nutty dough. If it doesn’t come together, add a few drops of water and pulse again!
  5. Pinch off about a tablespoon of the dough and roll it in your palms to form a smooth ball. Repeat ’til you’re out of dough.
  6. Put the toasted shredded coconut in a shallow plate or a piece of parchment paper. Toss each of the balls into the coconut, making sure to coat the entire surface.
  7. You can refrigerate your balls in a covered container for up to 1 week, or freeze ’em for up to a month.

Notes

Feel free to substitute another freeze-dried fruit of your choice for the strawberries to mix things up. I’ve had great success blitzing up these energy balls with freeze-dried blueberries and raspberries. Also, if your dates have been hanging out in your pantry for a while and are no longer super moist, add a few drops of water when you’re blending them together, and your balls will form beautifully!
