Imagine the gasps and compliments as you unveil this magnificent roast at your Thanksgiving or Christmas dinner. Its regal presentation, with bones reaching skyward like a crown, makes it an instant conversation starter. What your guests won’t realize is how straightforward it is to achieve such a luxurious outcome, thanks to two secret weapons: my signature Magic Mushroom Powder seasoning and the brilliant reverse-sear technique championed by culinary expert J. Kenji Lopez-Alt. These two elements combine to ensure a pork roast that’s incredibly juicy, tender, and bursting with flavor, boasting a perfectly golden, crispy crust.

The Umami Secret: Magic Mushroom Powder

For those familiar with Nom Nom Paleo, my Magic Mushroom Powder is a staple for good reason. This umami-packed seasoning salt is a game-changer for savory dishes, and it truly works wonders with roast pork. Crafted from finely pulverized dried porcini mushrooms, mixed with salt, thyme, and black pepper, it adds an incredible depth of flavor that elevates any meal from good to extraordinary. Umami, often described as the fifth basic taste, provides a rich, savory deliciousness that makes this seasoning indispensable.

The beauty of Magic Mushroom Powder lies in its versatility and profound ability to enhance the natural flavors of meat. When applied generously to the crown roast, it seeps into every crevice, creating a mouthwatering crust that is both savory and aromatic. You can find the original recipe for this magical blend in our first cookbook and readily available on this blog. For those busy holiday planners, you’ll be pleased to know that pre-made tins of my ‘shroomy seasoning salt are often available at select Whole Foods Market stores during the festive season, offering a convenient shortcut without compromising on flavor.

When seasoning your crown roast, remember that the amount of Magic Mushroom Powder should be adjusted based on the weight of your meat. A general rule of thumb is to use about ¼ tablespoon (or ¾ teaspoon) of the powder for every pound of pork. So, if you have an 8-pound crown roast, you’ll need approximately 2 tablespoons of this fantastic seasoning. This ensures a consistent, flavorful result regardless of your roast’s size.

Mastering Perfection: The Reverse-Sear Technique

The second pillar of success for this Magic Crown Roast of Pork is the reverse-sear technique, perfected by J. Kenji Lopez-Alt. This method might sound complex, but it’s remarkably simple and yields consistently perfect results. Instead of searing the meat first, you begin by slow-roasting the pork at a low temperature until it reaches an almost-done internal temperature. This gentle cooking ensures that the entire roast cooks evenly from edge to center, resulting in an incredibly tender and juicy interior.

Once the roast has achieved its target internal temperature, you’ll remove it from the oven, crank up the heat to a high broil, and then return the pork for a quick finish. This final high-heat blast creates an exquisite, deeply browned, and crispy crust, locking in all the juices and adding an irresistible texture contrast. This two-stage approach virtually eliminates the risk of overcooking the edges while waiting for the center to catch up, a common pitfall with traditional high-heat roasting. The reverse-sear ensures every slice of your Magic Crown Roast of Pork is cooked to perfection, a testament to culinary ingenuity and simple execution.

Preparing Your Magnificent Crown Roast

Creating a truly spectacular crown roast begins even before it enters your kitchen. Most quality butchers and grocery stores can prepare a crown roast of pork, often available pre-ordered, especially around the holidays. A “tied and Frenched” roast means the ribs are trimmed of meat and fat, revealing the bone for that classic crown shape, and then tied together to maintain its impressive form during cooking. Don’t hesitate to call ahead and discuss your needs with your butcher; they’re usually happy to help you select and prepare the perfect cut.

Once you have your beautiful 10-pound crown roast (or adjusted size), the preparation is minimal but crucial. Start by patting the roast thoroughly dry with paper towels. This step is often overlooked but essential for ensuring the seasoning adheres properly and for promoting a beautifully crisp exterior during cooking. Next, generously sprinkle the Magic Mushroom Powder all over the meat, ensuring it reaches into all the nooks and crannies between the ribs. Don’t be shy; this is where the magic begins!

This seasoned roast can be prepared up to three days in advance, allowing the flavors to meld beautifully. Simply cover it lightly with plastic wrap and store it in the refrigerator. This advance preparation is a lifesaver during the busy holiday season, allowing you to focus on other aspects of your meal without feeling rushed on the big day.

The Cooking Journey: From Slow Roast to Golden Perfection

When you’re ready to cook, preheat your oven to a gentle 250°F (120°C) with the oven rack positioned in the middle. Remove the pork from the refrigerator and pat it dry once more with paper towels – this helps achieve that coveted crispy skin. Place the seasoned crown roast on a stainless steel wire rack, which rests on top of a rimmed baking sheet. This setup allows for even air circulation around the roast, promoting consistent cooking and preventing the bottom from getting soggy.

The initial slow roasting phase will take approximately 2 to 2½ hours. The exact timing can vary depending on your oven and the roast’s starting temperature and thickness, so using an instant-read thermometer is essential. Cook the pork until the center of the meatiest part registers 140°F (60°C). This temperature indicates it’s nearly done, but still has room for the final sear. Using a reliable thermometer ensures food safety and perfectly cooked meat.

Once the roast reaches 140°F, remove it from the oven and set it aside. Immediately increase your oven temperature to broil. Allow the broiling element to heat up fully, which usually takes about 5-10 minutes. This super-hot environment is key for developing that beautiful golden-brown crust. Once hot, return the roast to the oven and broil for 10 to 15 minutes. It’s crucial to rotate the roast a couple of times during this broiling process to ensure even browning on all sides and prevent any single area from burning. Keep a close eye on it, as broilers can work quickly!

The Grand Finale: Resting, Garnish, and Serving

Once your Magic Crown Roast of Pork has achieved its glorious golden-brown crust, carefully remove it from the oven. This next step is perhaps one of the most important for any roast: resting. Transfer the roast to a clean cutting board and let it rest for at least 20 minutes before carving. This resting period allows the muscle fibers to relax and the juices to redistribute throughout the meat, ensuring every slice is incredibly moist and flavorful. Skipping this step often results in dry meat, as all the delicious juices will simply run out onto your cutting board.

After resting, it’s time for the grand presentation! The whole point of preparing a crown roast is to showcase its impressive form. Before carving, present the entire roast at the table, allowing your guests to admire your culinary masterpiece. For a traditional touch, garnish the center of the crown with a vibrant bunch of curly parsley, or perhaps some roasted apples and onions, creating a stunning visual display.

Once everyone has admired the roast, you can begin carving. Slice between the bones to serve individual chops, ensuring each guest receives a perfectly cooked, tender, and juicy portion. Serve with your favorite holiday side dishes – roasted vegetables, mashed potatoes, or a vibrant cranberry sauce all pair wonderfully. Dig in and savor the rich flavors and tender texture of this extraordinary holiday roast!
